Buttermilk Pancakes II

Did not care for these pancakes. The batter was too runny and they were hard to cook. I didn't like the taste. Back to using Bisquick.

Restaurant-Style Coleslaw II

It did taste like KFC but it was runny. It did have a strong lemon taste on day one but after sitting for a full day the flavors blended well. However, next time I will use less lemon juice.

Tomato Zucchini Casserole

Great side dish! Lots of flavor. I used a mixture of cheeses and omitted the onion. I also used gluten free planko bread crumbs that made for a delicious crunchy topping. I will be making this often!

Amazing Almond Flour Pancakes (Gluten-Free and Paleo-Friendly)

Very good gluten free pancakes, better than any mix I've tried. I used agave syrup instead of honey and milk instead of water. Since there is sugar in the batter I recommend cooking then at a lower temperature, medium low setting, to avoid burning them.

Gluten Free Almond Swirl Brownies

Fudge brownies! Tastes great. I cooked it 45 min because of the toothpick test but I think it could have used some more baking time. The top was crunchy but the bottom was sticky.

Italian Sausage, Peppers, and Onions

Very good! Prepared exactly as written. I would recommend serving with Italian brad to soak up the delicious sauce or serve on rolls and top with provolone cheese.

Good flavor! I also added broccoli and used canned diced tomatoes because I didn't have any fresh tomatoes. I marinated the beef for a few hours.

Seared Sea Scallops

Awesome!!! I substituted corn starch for the flour due to a gluten intolerance. I also used 1 tsp Old Bay seasoning in place of the seasoning salt because that is what I had. The scallops were slightly crunchy and delicious. I think cooking them aon high is the trick to keeping them crunchy and not mushy as some reviewers mentioned. Brush with melted butter before serving.

Slow Cooker Enchiladas

The family loved this! I took the recommendation of other reviewers and used 2 lbs. of ground beef. I added a small can of diced green chilies to the cheese/soup mix and included black beans in the layers. We served on lettuce with pico de gallo, guacamiole and sour cream. Tastes great topped with crushed tortilla chips, it needs that crunchy texture. I cooked it for 3 hours.

Pumpkin Pancakes

Flavor is superb! Batter is too thick. One reviewer advised not to thin with milk because it would take away on the pumpkin flavor so next time I make these I will reduce the flour to 1.5 c. and adjust as needed.

High Temperature Eye-of-Round Roast

Oven-Fried Pork Chops

Made this lower fat (egg whites, skim milk and no butter) and with seasoned gluten free breadcrumbs. The pork chops were thick so I cooked them at 425 for 20 min and then lower to 350 for 10 min.
