No Bake Cookies V

I've been having issues with these not turning out too! I have a different version of "rolling boil" every time I do it. According to the blog All in Good Food he decreases the sugar to 1 and 3/4 cup *this effects the sugar concentration* and brings to 230 degrees F under med-high heat. Just like fudge, if it's raining or humid, you will need to boil a bit longer (but not above max soft ball stage) so the cookie will suck moisture out of the air. Have all your ingredients pre-measured b/c this moves fast after removing from heat.

Chocolate Peanut Butter Bars II

Rempel Family Meatloaf

I added real (not dried) minced garlic, Worcestershire sauce, a tsp or so of mustard, and some sauteed onion pieces. Be careful up don't make it too wet! The butter crackers are perfect! It gives the meatloaf a nicer texture than bread crumbs.

Easter Leftovers Casserole

I used all the potatoes I had left. (about 8-10)I also used the rest of my ham (3-4 cups). I added a can of corn, 1 cup of cheese to the mix (plus one cup on top, my boyfriend loves cheese)and crushed some saltines on top. All in all a pretty good recipe to get rid of all that leftover ham. I thought it was ok, but my father loved it! He ate 1/2 the pan himself. Will make again.

Apple Pie I

So easy! I've never made pie in my life, and this turned out fantastic. But please, know your apples. The first time I made it I mixed Jonathan and MacIntosh. You could taste the difference in the pie. (Jonathan = tart, Mac = just right) So I made it again, with the same mixture of apples, added 1 cup of sugar to tame the tart. I added lemon juice (sprinkling), 12tsp of nutmeg, 1TBS of cinnamon and a "half a handful" of brown sugar. I also heavily sprinkled the top with flour. (These apples were very wet.) Fantastic!

A Southern Fried Chicken

Excellent! I found that there was a lot of milk mixture left over. Next time I'll reduce it. I also found that 375 was too hot, and that 300 worked perfectly. I used an electric skillet to help control the temperature. I used boneless skinless chicken breast. I was all nice and juicy! Make sure you cut the breasts in half. My boys and I loved it!!! A must for picnicing!
