Yummy Veggie Omelet

Made it this morning and really liked it. Substituted olive oil for the butter and added diced leftover ham, but otherwise followed the recipe. Made for a nice light breakfast meal and wasn't a lot of trouble to make.

Biscotti

This recipe is wonderfully easy to make. I made it as is, then made it with chopped hazelnuts. Also tried it with dark bittersweet chocolate melted and drizzled over it ti give a wonderful finished look. Definitely a keeper recipe!

Gingerbread Biscotti

This recipe definitely made it to my make-every-Christmas baking list! Loved the flavor and how easy it is to make. I used the lemon icing recipe by Carol to ice the biscotti and then after the icing had set, I used bittersweet chocolate melted and drizzled over the biscotti to make a very professional looking cookie. Gave them as gifts this year to rave reviews.

Spinach Quiche

I made this for Christmas brunch 2013 and loved it. I don't particularly like mushrooms, so I left them out of the recipe. I served the quiche with bacon bits and fresh salsa on the side as toppings. Yum! Will definitely make this quiche again.

Pecan Pie

I love this pecan pie recipe! The only addition I made was a lite drizzle of bittersweet chocolate to dress it up after it was finished cooling. Will definitely make this recipe again!

Quick and Easy Pizza Crust

Use this recipe a lot and it always turns out nice. I do recommend preheating a baking stone to cook it on and using a piece of parchment paper to roll it out on. (The parchment paper makes it easy to slide with all the toppings onto the preheated stone.) the stone makes for a delicately crisp crust that cooks on top and bottom quite evenly.

Old-Fashioned Pancakes

Love this recipe! In a pinch I used almond milk (1cup) and 1/4 cup plain yogurt in place of the milk and the pancakes were equally wonderful. I've quadrupled this recipe for a large breakfast event which worked just as well. I also use this as my base recipe and add a cup of fresh blueberries for some delicious blueberry pancakes. This recipe always turns out yummy! They freeze nicely when or if you have leftovers

Italian Sausage Soup with Tortellini

Yum! Used sweet Italian style chicken sausage, so virtually no fat. Sautéed the onions and garlic in olive oil. Used pesto-stuffed tortellini for an awesome flavor. Hearty winter time soup, although I forgot to cover during the last half hour of simmering and lost much of the liquid. Next time I'll either add more broth or remember to cover it!

Egg Blossoms

Easier than I thought, the only change I made was to use gruyere cheese instead of Parmesan. Good breakfast dish with the ability to prep much of it in advance.

Southwestern Egg Rolls

Yummy! These are not difficult to make, but I did a few substitutions to accommodate what I had on hand. Used fresh spinach rather than frozen, forgot the parsley and didn't freeze them, just fried them right away for maybe 2 minutes each. The only thing that was really different for me is that it took closer to 40 minutes for me from start to finish. Definitely plan to make these again- only will likely double the recipe. This recipe only made 8 eggrolls using homemade-style 6 inch tortillas.
