Bread Machine Challah I

I did not know what Challah was when I made this, so I didn't know what to expect. This is a great slightly sweet, fluffy yet filling bread. It's great as toast, too! I've made this 2 or 3 times and it has never failed to please us.

Butternut Squash Soup

I used vegetable bouillon to keep it vegetarian. I added a litlle too much cayenne and it tasted funny. Next time I will use more broth to make it thinner because it was very thick.

Cheese Herb Bread

This is great! I omited the milk powder, used 2 tsp of yeast, and used a lot of Italian seasonings. I also added fresh minced garlic. My husband added too much yeast once and the bread looked like an inside out mountain, so you really do have to be careful of how much you use. This recipe does work on the basic rapid cycle.

Vegetarian Stuffed Peppers

This turned out great! I made this and froze it so that I could pop it in the oven another day. Since it was frozen, it had to bake quite a bit longer (about 1 hr 15 min total). I like the way the rice got crunchy while baking. I sprinkled with cheese instead of the tomato sauce.

Easy Slow Cooker Meatballs

These crumbled while cooking, but were pretty simple. Next time I will try 1/4 of an onion because the meat wouldn't hold a whole onion in the mixture.

Summer Squash Casserole

This turned out great! We like it because it's a different recipe and we like variety. My husband sugested to make it for Thanksgiving because it's so unique. My changes: I only used 1 onion, I used 2 zucchini and 2 yellow squash, and I added red bell pepper and a few cloves of garlic. I saw one review say that the veggies were mushy: I think you need to be careful to use only a little water when boiling. Also, when I first removed the dish from the oven, it looked watery, but after sitting for 5 minutes, it was fine.

Greek Pasta Salad I

I used this recipe because I needed to use bell peppers and mushrooms. I didn't use some of the ingredients b/c I didn't have them. I made a lot of this salad and there was only a tiny bowl of leftovers!

Chicken and Dumplings III

This is very simple, which earns lots of points from me, but the taste isn't fabulous. It just the basic chicken dumpling soup. I split the recipe in 1/2: one with chicken and the other half with veggies only. I used veggie broth, carrots, and cream of mushroom w/ roasted garlic (in place of the second cream of celery) in the veggie version. i did the same, but used the chicken water in the chicken batch. I'll make this again, but next time I'll add a bag of mixed veggies.

Roasted Asparagus and Garlic

This was pretty good. I had to bake it @ 450 because that's the temp my other things were baking at. It turned out stringy and sort of slimy at parts. Good idea, but I think I'll just steam it next time.

This was very easy and good. I was able to make it half asleep (to make it for my fiancee's b.fast) and it still turned out. It did not take as long as it said it would-- only about 25 minuets.

Tofu Parmigiana

MMMmmm. This is good. I sliced the tofu as thin as possible and froze it on a plastic cutting board for about 20 min. I didn't know if I should layer the tofu in the baking dish, but I did and it worked. I think next time I will use a bigger baking pan and bake a little longer-- I like it crispy.

Vegan Black Bean Soup

This is great! It really is more like a chili; it's very hearty. I used a small food chopper to blend the beans, and it worked fine. I don't like celery very much so I used zuchini (sp?) which turned out very tasty.
