Quick and Easy Shrimp Fajitas
My husband loved it. Said it was better than the restaurante's fajitas. I didn't have bell peppers so I just did onion sliced up. I sautéed the onions in olive oil and then was too lazy to take them out (and my husband likes them really caramelized anyhow). So I just put shrimp in their with them. It was so easy and we served it in corn tortillas cause that's what we like! We used Lawry's taco seasoning too cause it is by far the best!

Easy Lettuce Wraps
This was pretty delicious for how easy it was. I used lean ground turkey as we tend to eat very healthy. I didn't have any sherry on hand so I used a splash of cooking red wine. I also added mushrooms finely chopped and a few water chestnuts chopped as those are typically in lettuce wraps and I like them. My husband really liked it and I served it with some fried rice and roasted garlic broccoli. My 2 children also ate it well. The children and my husband said it was good just over rice.

Whole Grain Pancakes
These were very yummy! I was looking for something healthy and the 4 year old and even the 10 month baby gobbled these up. I did add a dash of salt and used regular milk that I soured with 2 tblsp of white vinegar(let it set a few minutes). I also added a dash of vanilla. These cooked up great to my surprise even with no oil in the recipe. Made plenty to freeze for quick breakfast for school. Oh and I did throw some blueberries in half the mix and that was great too!
