Foolproof! My husband loves steaks but hates roast beef - but there was a super sale on rib roasts so I went for it, and tried this cooking method - FABULOUS! I used a generous amount of Montreal steak spice and followed the cooking instructions. I didn't peak but was a little worried - it was absolutely wonderful and tasty. The exterior had a nice crust, and the inside was rare and juicy - like he likes his steaks! I can now make roast beef after 30 years of marriage!!
