Ginger Pear Bread
I had two big delicious pears left but their time was running out and I didn't want to toss them. This is by far the best way I could find to use them. I ran out of flour so I replaced 1/2 cup with ground oatmeal I had at hand. I also used egg substitute. Apart from that I followed the measures exactly (even 1/2 tsp salt, which looked a bit suspicious at first). Absolute perfection.

Tofu and Veggies in Peanut Sauce
Simple perfection! Very quick and delicious. I first fried some garlic, ginger and sesame seeds, and added chili powder, sugar and balsamic vinegar to the mixture. I also used shiitake which I had at hand. Instead of PB, I used soaked cashews and peanuts, part of which I crushed. I let them burn a bit because that makes them taste divine. I also added some noodles at the end. Deliciousness.

Tomato Pork Loin Chops
I just made it and it was perfect! I served it over chicken garlic couscous and it worked together wonderfully. Plus, the lunch was ready in 30 min, which is awesome. I omitted fennel seeds because I couldn't find any on the shelves and replaced tomato sauce with tomato paste mixed with water for the same reason. I also added 1/2 tsp garlic powder. The meat came out very soft and yummy. Next time I would only slightly cut on pepper flakes (came out a little too spicy for my taste) and find that fennel, because it really looks like it would add depth to the dish. Don't forget to add water occasionally to avoid burning.
