Tofu and Veggies in Peanut Sauce
Simple perfection! Very quick and delicious. I first fried some garlic, ginger and sesame seeds, and added chili powder, sugar and balsamic vinegar to the mixture. I also used shiitake which I had at hand. Instead of PB, I used soaked cashews and peanuts, part of which I crushed. I let them burn a bit because that makes them taste divine. I also added some noodles at the end. Deliciousness.

Tomato Pork Loin Chops
I just made it and it was perfect! I served it over chicken garlic couscous and it worked together wonderfully. Plus, the lunch was ready in 30 min, which is awesome. I omitted fennel seeds because I couldn't find any on the shelves and replaced tomato sauce with tomato paste mixed with water for the same reason. I also added 1/2 tsp garlic powder. The meat came out very soft and yummy. Next time I would only slightly cut on pepper flakes (came out a little too spicy for my taste) and find that fennel, because it really looks like it would add depth to the dish. Don't forget to add water occasionally to avoid burning.

West Indian Curried Chicken
I had troubles making good curries lately and finally I found this great basic recipe. I did cut on salt like other reviewers suggested (I added 1/3 of the suggested amount) and it turned out perfect. I also added 1/2 tsp of each chili pepper, turmeric, garam masala and cumin. Instead of adding garlic during cooking, I did the trick I learned from my Indian friend--when curry is about to be done, fry minced garlic and ginger in a separate pan on little olive oil for 2 minutes, then add it on top of the curry. It really boosts the flavors. I kept adding (little) water throughout, and at the end added 3/4 cup warm water with 1 tbsp corn starch for consistency, because I omitted potatoes. I also stirred in 1/4 cup of sour cream and served it over brown rice. Yum!
