Stuffed Green Peppers I

I enjoyed this dish but made several changes based on the reviews. I added fresh garlic and Italian seasoning to add more flavor to the meat mixture. I also cut the peppers lengthwise instead of cutting the tops off since that seems wasteful. Since we're trying to be healthy I used brown rice (success boil in the bag bout of the bag added to beef mixture) and ground turkey. I used onion powder instead of onions because my hubby doesn't care for onion too much but I like the flavor. I didn't use tomato soup, too much sodium (hubby has high blood pressure) and used tomato paste diluted with water and seasoned with Mrs. Dash, pepper and onion powder. I added Rotel with diced chilies and a can of diced tomatoes instead of whole tomatoes chopped up. (I'm efficient not lazy) ?? I also layered the ingredients in the peppers as another reviewer suggested in the following order, sauce, meat mixture, cheese. Turned out great and I will make it again. The next time I plan to add sausage for more zip!

Golden Rum Cake

Although I loved this recipe the folks at work felt the rum was way too strong. It's a matter of preference and not for the faint of heart or for kids since there is definitely a kick with all of the rum.

Brooke's Best Bombshell Brownies

I prepared this recipe as is and got rave reviews at work. This was my first attempt at brownies from scratch and they were a BIG hit! I plan to make them again to give away for the holiday.

Buffalo Chicken Dip

This dip is awesome! My sister made it for Labor Day and I loved it so much I decided to make it for an evening with the girls. I was shocked when she told me it was canned chicken but since I liked it so much I didn't change it up when I made it. The first time was a huge hit and I didn't tell the girls it was made with canned meat. TImadeit Iadded jalapeƱos to up the spice factor and increased the hot sauce, because we like it hot. (No pun intended:-)) I also used a yogurt based blue cheese dressing instead of full fat ranch to save calories. The next time I make it I'll use low fat cream cheese and try it with rotisserie chicken to see (taste) the difference. Our local butcher has a version of this dip that we love using smoked chicken but one of the girls commented that she like my version better. ??That was a great compliment since we had dubbed the butchers version as "crack" since it was so addictive. I'm just hoping they don't show up at my front door at all hours of the night for a hit of my buffalo dip.

Simple Garlic Shrimp

Very tasty, I cooked as directed, the only change I made was using dried parsley since I didn't have fresh parsley on hand and added capers in addition to the brine. Still tasted fantastic and is definitely a keeper for a quick dinner on a weekday night. Served over angel hair pasta with garlic toast. Next time I think I'll add mushrooms and possibly broccoli since I'm a fan of both.

Penne with Shrimp

This dish was quick and easy but I also modified it based on some of the other reviews. I think it would be bland without additional seasonings. I added crushed red pepper, 1 tablespoon of sugar, italian seasoning, no salt seasoning and broccoli. I only had crushed tomatoes and Moscato wine on hand but think it still tasted great. When I make this again I'll add mushrooms and sausage because we really like them. All in all it was tasty and well received in my house. I will definitely make this again.

The only change that I made is that I added more fruit and flavored brandy. This was a big hit for a graduation party. I must say we were ALL feeling pretty good by the end of the night.

Quick Black Beans and Rice

Really good flavor. I didn't have quick rice so it took a bit longer to cook. I used chicken broth instead of water in the rice to add more flavor. I also used mexican stewed tomatoes with jalapenos and added hot peppers to give it some kick. I didn't add the rice to the mixture until the end and let it all simmer for about 5-7 mins. Yummy!!
