Seven Layer Dip II

I use this recipe all the time and my family loves it! I have one brother who specifically asks for this every time there is a family get together like the Super Bowl. I add one pound of ground beef to it as well and it's delicious! Thank you!

Autumn Cheesecake

I made this for a family Halloween party and everyone requested it again for Thanksgiving. It is so easy and delicious! Thank you Stephanie for making me a cheesecake queen! I read pretty much all of the reviews before I made this because I had never made cheesecake before and was super nervous. I baked it in a water bath, doubled the cheesecake ingredients, prepared the apple sliced before starting the cheesecake and microwaved them for a minute to remove excess moisture, used all graham crackers for the crust and a little extra butter (I didn't have any pecans on hand), added a streusel topping, baked for 70 minutes and let cool for 45 min with the oven door open and drizzled some caramel on top before serving. It was amazing!!! Some tips from my sister for making cheesecake for those who, like I was, are cheesecake making virgins: make sure all of your ingredients for the cheesecake itself are room temperature and mix until completely smooth or it may come out grainy, a water bath/pan with water are important for the cheesecake to stay moist and not crack, make it ahead of time and give it time to set and press the crust firmly into the pan to make sure it stays well.

Chicken Pot Pie IX

Made this for Sunday dinner for 3 men and they loved it! There were no leftovers! My husband even asked if it could go on our menu rotation. It was that good! I followed a few suggestions from the other reviewers and it turned out great. I used a leftover rotisserie chicken, boiled the veggies in chicken stock and used that stock for the sauce, I also doubled the sauce so it wasn't dry, added more seasonings and did an egg white wash on the crust and baked it beforehand for 5-6 minutes so it wouldn't get soggy and it turned out fabulous! Mrs. Sigg's Fresh Pumpkin Pie

I just made this for Thanksgiving and it is so delicious! I made a few mini pies for us to try before we take the big one to our family party tomorrow and they were so amazing! The flavor of the pumpkin filling is perfect, not to sweet, and it isn't hard at all to roast the sugar pumpkin. I threw all of the filling ingredients into the blender so it would be super smooth and less clean up. I also only used 3/4 of a can of evaporated milk because some of the reviews said it was too runny and I used 1 TBS Pumpkin Pie Spice just so it would be more flavorful. I used a refridgerated Pillsbury crust, used an egg white wash and blind baked it so it wouldn't get soggy (350 for 10 min then let it cool) and definitely use the foil! There was enough filling for two pies. Thank you for the recipe Beth!
