Irish Champ

Champ and sausages!, one of my fav dinners :) I love loads of scallions ( green onions ) in mine but have to hold back for the kids. And we all have an extra dollop of butter on top too. I personally don't add the raw eggs that my mum always did as I have a child with an egg allergy but it still tastes good this way.

Ferg's Ulster Fry-up

Belfast girl here to explain an ulster fry! An ulster fry is unique to ulster! I have one every weekend. It is a six county fry up ( an item for each county of ulster). Potato bread, soda bread, bacon, eggs, sausages and fried tomato or mushrooms, the last varies wherever you get it from. I've been eating ulster fries since I could chew and I have never had black pudding in my life, nor did my mummy, daddy, grandparents. It is an item from mainland united kingdom, also known as blood sausage? It originates from Lancashire. We don't have it in a traditional ulster fry here although a few hotels and restaurants have started to serve it over the years, along with hash browns, white pudding etc but it has no place in an ulster fry and I personally wouldn't be able to anything that shared a plate with it lol.

Carrot Cake XI

lovely moist cake.. as others advised I cut the oil to one cup. I used only 1 tsp of cinnamon and omitted the walnuts for the kids. I split it between two smaller square tins and they were ready in 30-35 mins. I also used the cream cheese frosting recommended by others and from this site.

French Bread Rolls to Die For

not for bread machine users! I checked the dough on the off chance and though id followed the recipe correctly, all there was, was a very sticky mess! a lot of flour, and a bigger mess later, I managed to salvage some dough and make some rolls, which were ok, but definitely not worth all the effort :( this wasn't my first time, I make French bread dough and oven bake it regularly, as rols or in a 2lb loaf tin....I wont be trying this again though.

Pizza Dough III

this was yummy! i added 1/2 tspn garlic powder to the dough for a little extra flavour. we love pizza, but dominos is so expensive now theres 6 of us and this seemed like the most straight forward for a first go.
