White Chocolate Macadamia Nut Cookies II

I made and LOVE this recipe, the cookies were soft and delicious!! I baked them for 10 minutes, also left them on the cookie sheet for one minute. I also used white baking squares, chopped of course and they worked great!!

Cheesy Ham and Hash Brown Casserole

I used the julienne style hash browns and so LOVED this recipe! I used left over ham from the night before, just chopped it up and added it.

Bread Machine Calzone

I made this for my entire family and everyone loved it. The kids are finicky, so I told them it was inside out pizza and that went over great! I used ground Jimmy Dean sausage and pepperoni (a stick cut & chopped is less expensive). I also made the bread machine recipe and the pizza crust from a tube. My husband said the bread machine was better but it would be fine to use the pizza crust and avoid "all that work". (I didn't fill him in on how easy it was.) I did make one seemingly important addition -I sprinkled seasoning on the bread before baking, I used a parmesan blend, tasty!

Chili Corn Bread Wedges

We enjoyed this corn bread tremendously, it was simple to make (I also used Jiffy mix) and we couldn't stop eating it. I think this should be a new staple in our home. It was the right amount of sugar, chilis and corn. Yum!

Sugar-Free Peanut Butter Cookies

Great recipe! My family LOVES it, but mind you, they are used to splenda, when I first tried them, I was sure no one would like them. On the contrary. I make them weekly now, I only bake 1/2 a batch at a time and add 1 tsp of vanilla to it, I've never tried it without. Good with crunchy Peanut butter as well. Edit to review; I've since tried with low fat p-nut butter & like them, but hubbie didn't enjoy as much, says they didn't 'melt in his mouth'.

Pecan Snack

Love them as does my diabetic family. Substituted sugar with 3/4 cup splenda and also added 1/4 cup Splenda brown sugar. Use 1 tbsp rather than tsp of cinnamon and also added 1 tsp vanilla to the egg whites.

Mango Lassi II

I was looking for a mango recipe for my teenage son. I'd been drinking berry protein smoothies and wanted him to get a little fruit in his diet, but the only fruit he seemed to like was mango. So I picked up a bag of frozen chopped mango. I halved the recipe in case he didn't like it and used vanilla almond milk instead of yogurt, just as I do in my smoothies. He loved it, so we tried adding about a 1/4 cup of chopped frozen pineapple which was quite tasty! I will adjust the amount of the sugar to suit us. But am quite thankful for the recipe!
