Old Fashioned Coconut Cream Pie

I have made this pie for Christmas, church, soup suppers, etc. I have never had anything but great compliments. I did substitute 1/3 c cornstarch for the flour. I mixed the ingredients and cooked in the microwave, mixing with a wisk about every minute or two to remove any lumps. This speeds the cooking and you don't scorch the filling. You can't tell any difference if you use two c half-and-half and one cup 2% milk. I put a full 1 c toasted coconut in the filling and top with another 1/4 c toasted coconut. I make a meringue rather than using frozen whipped topping. I will be taking two pies for a chili supper tomorrow evening and hope that I get a piece for myself. This recipe is well worth the time. Holiday Chicken Salad

I was hesitant to try this chicken salad because I'm not a big fan of cranberries. Oh my gosh! I took it to a community salad supper and was asked for the recipe by several. One of my friends has forwarded it to her boss in Texas. It's a great recipe!

Awesome Carrot Cake with Cream Cheese Frosting

I have made this recipe for different occasions, (school functions, church, work, bake sale). I, too, change the recipe a bit. I cut the oil to 3/4 c and the cinnamon to 2 tsp. I don't mind having extra frosting. I always end up using it. I have a friend who always requests that I bring it. Tonight I am hosting Bunco and it will be my dessert. This recipe has never failed me.

Big Al's K.C. Bar-B-Q Sauce

I had smoked a Top Sirloin Roast and with the leftovers, I made BBQ beef using this sauce recipe exactly as is. I sliced the roast, added sauce and placed in a 250 degree oven for about two hours.

Cocktail Meatballs

I made a change to the recipe which I made to take to the office. I didn't have the chili sauce so I added hot picante sauce instead. Needless to say, they were a hit. I had made extra meatballs and prepared them according to the recipe (using chili sauce). My family enjoyed them as well. My preferance is picante.

Mom's Best Peanut Brittle

Best Chocolate Chip Cookies

Excellent recipe for a nice and snowy day. My family is eating them fresh from the oven. Hopefully, I will have a few leftovers. I did double the recipe. I made some with a large scoop and some with the small scoop. The large scoop does require 15 minutes of bake time vs the 10 minutes. Thank you for a great recipe.
