Chocolate Cupcakes

Wow! These are great! Moist, fluffy, and chocolaty. :) They taste great frosted or plain. Amazing. I used 1 cup of cocoa instead of 3/4 cup - otherwise I stayed true to the recipe. Will definitely make again and probably make my chocolate cupcake staple.

Oat Applesauce Muffins

Amazing! These are subtly sweet and wonderful for a snack. I did do a couple of substitutions: 1/4 brown sugar and 1 tbsp honey instead of 1/2 cup brown sugar, 1/4 cup eggbeater instead of the egg. I also didn't wait the full 2 hours since I was in a hurry; I only waited 1. I added 1 tsp of cinnamon to it as well. Overall, amazing, moist muffins packed with fiber. :) Next time I'm putting blueberries in them!

Whole Wheat and Honey Pizza Dough

Turned out well. Wasn't sticky at all. I greased the pizza pan with a good coat of cooking spray; it came right off. Came out thick and good. I followed someone's advice and prebaked it for 15 minutes at 350 then put the toppings on and baked for 20 minutes; then 5 minutes at 400. Came out perfect. My boyfriend who hates wheat bread, loved it.

Steak N Gravy

I didn't use venison; I used beef round top instead. I must say that this was really good. I cut the recipe in half and made it for my boyfriend and I. He devoured it instantly. I like the consistency of the gravy too. I wouldn't cook it all the time due to the fat content, but definately will be a nice staple to have. Served with roasted red potatoes and veggies.

Crisp Oatmeal Cookies

These are divine!! I didn't add the coconut or the chocolate chips since I didn't have any one hand. I used butter instead of shortening, egg beaters instead of egg, and Splenda instead of white sugar to reduce calories, fat, and sugar. I also added a little bit of cinnamon. They came out amazing! Everyone loves them.

Blackberry and Blueberry Pie

I've made this pie twice, and it's always gone in less than two days. I use Splenda for Baking for instead of just pure white sugar, and I use my own pie crust recipe. I also followed the recommendations and added some cornstarch. It's still a little goey, but just right. Perfect combination of sweet and tart. Excellent with a lattice pie top or some ice cream on the side.

Blueberry Scones

These came out very yummy. The dough was a bit sticky and they were hard to shape, but overall very delicious! Instead of 12 small ones, I made 6 big ones. I made them for Mother's Day, everyone enjoyed them.

Cake Mixes from Scratch and Variations

Amazing cake! I halved the recipe and made one 8 inch round cake. I used all butter instead of shortening. Cut in the butter with my hands too. I also used Splenda for Baking instead of all sugar. The batter seemed really dense, but the cake turned out sweet and relatively moist. Next time, I'll add a bit more milk and some cocoa to half the batter.

Best Ever Pie Crust

This crust came out really well! Very flaky and it holds together really well. Mak sure to cover the edges with foil near the end of baking. And chill well before rolling it out and use a generous amount of flour to prevent tears.
