Spinach and Orzo Salad

Thanks so much for sharing. I substituted sunflower seeds for the pine nuts to be allergy safe.will definitely make again. Would be great with grilled chicken or seared tuna.

Grain and Nut Whole Wheat Pancakes

I did not care for this recipe. I make buttermilk pancakes from scratch using the Betty Crocker recipe at least once per month. I thought I would try this one for the added whole grains. If I try this again, I'd use 3 eggs, flip the baking powder to soda ratios, use brown sugar instead of white (more complimentary to wheat flours), start with 2 cups buttermilk and add more for desired consistency. I'd use 6 tablespoons of oil and eliminate the milk.

Bread Machine Bagels

Perfect bagels, way better than store-bought. Made 1 batch and ended up making 2 additional batches the same day to freeze for use throughout the week because they were so popular.

Valentino's Pizza Crust

Significantly better than any chain restaurant pizza. Made in a bread machine substituting bread flour for the all purpose and rapid rise yeast. Was perfect!

Eggless Chocolate Cake II

I make chocolate cakes from scratch frequently and this was one of the best even vs egg containing. I followed the recipe but also added 3 oz of melted semisweet baking chocolate to boost the chocolate flavor. Baking in 8" rounds, bake for 35 minutes. In cupcake tins, 22 - 25 minutes, made 36 cupcakes. Topped with chocolate ganache, it was a hit with my daughter who has egg allergies as well as the rest of the family.
