Best Cream Of Broccoli Soup

Reviewed: Jul. 29, 2008
I felt "healthy" eating this soup! It was easy to make and tasted great even with my minor adjustments - I added 2 cups more broccoli and used low-fat milk instead. Thanks for the recipe!

Easy Broccoli Quiche

Reviewed: Dec. 3, 2007
I enjoyed eating this quiche! It was very tasty and easy to make. I did make a few modifications of my own and as recommended by a few of the reviewers: (1) I used 3 cups of chopped broccoli just to finish off what I had in my ref, (2) I used a 3:1 ratio of eggs to milk, because folks said this was the best ratio for quiche, (3) I used a combination of sharp cheddar and mozzarella cheese, because I like cheddar cheese on broccoli, (4) I used 2% reduced fat milk and I didn't add the melted butter to cut down some of the fat, (5) I added my favorite spices - 1/4 tsp thyme and a pinch of cayenne pepper, (6) I placed some of the cheese on the bottom of the crust first to minimize a soggy bottom, (7) I baked it for 45 mins, (8) and I sprinkled 1/3 cup parmesan cheese on top after it was done and broiled it until it was golden brown for a nice crispy crust. Next time, I will use less onion as it was a little strong, and less salt as the butter and cheeses were salty enough. Thanks for the recipe!

Simple, Classic Chicken Potpie

Reviewed: Nov. 27, 2007
I really enjoyed this recipe! It was so simple to make! It taste better and more hearty than store bought! I included some of the chicken skin, particularly the brown, crispy ones, into the mix for more flavor. I also added a can of no salt added sweet whole kernel corn for more crunch. I substituted the evaporated milk with lowfat 2% evaporated milk. It still tasted delicious and creamy. To save more dishes to wash, I made the white sauce in one saucepan on the stovetop starting with the broth and milk, then added all the rest in order. It came out fine and tasty. Thanks for the recipe!!!

Garlic Butter

Reviewed: Nov. 26, 2007
My SO and I enjoyed this recipe. It was really tasty! I do have to agree with everyone that it uses too much salt. Even if I halved the amount of salt, it was still a little salty. Next time, I will use a scant amount or even no salt at all. By the way, I couldn't find garlic salt at my local supermarket. So, I used kosher salt and added more garlic just like what some of the reviewers had done. Thanks for the recipe!

Persian Yogurt Salad

Reviewed: Nov. 25, 2007
This recipe is refreshing. It used a lot of yogurt than I liked. So, I just used 6 ounces of yogurt instead of 32 ounces. I also used 3 cucumbers instead of one just because I love eating them. Thanks for the recipe.

Sean's Falafel and Cucumber Sauce

Reviewed: Nov. 25, 2007
I tried this recipe, because it had many great reviews. Unfortunately, it didn't work too well for me. I followed the recipe word for word. However, the batch turned out to be too watery. I added more bread crumbs to soak it up and hold it together. But by doing that, it became more like bread crumb patties than falafel, and it lost a lot of flavor. Next time, maybe I will use dried chickpeas instead of canned, double the spices, and add one more egg than using more bread crumbs. Thanks for the recipe though.

Artichoke Spinach Lasagna

Reviewed: Nov. 25, 2007
My SO and I really enjoyed this recipe. I did modify the recipe a bit using a few of the great suggestions given: 1) I incorporated a ricotta layer as suggested by TYKE99 - ricotta cheese, 1 egg or egg substitute, mozzarella cheese, fresh parsley, and salt and pepper. Doing that gave the dish an extra dimension. 2) I do not like rosemary, so I used basil instead. 3) I do not like my dish oily and eat vinegary tasting artichokes, so I used artichoke canned in water instead. 4) I reduced the veggie broth to half, since a lot of reviewers said the dish was a little watery. 5) Since I did not find no-cook lasagna noodles at my local supermarket, and I was afraid my unboiled lasagna noodles might come out raw, I half cooked them. The lasagna noodles came out perfect! 6) Using 3 lasagna noodles did not entirely cover my 9X13 inch baking dish, so I used 4. 7) FINALLY... I used parmesan cheese for the topping, since I did not find herb and garlic feta at my local supermarket. It gave the dish a nice crust when I broiled the top. Thanks for the recipe!

Cucumber And Yogurt Salad

Reviewed: Nov. 25, 2007
My SO and I enjoyed this recipe. It was refreshing. I followed the recipe instructions except for the cucumber preparation. I peeled, seeded and sliced them thicker, and I did not salt them. They were not watery at all. If any water did form on top, I just poured it off. Thanks for the recipe!

Tabbouleh II

Reviewed: Nov. 25, 2007
My SO and I really enjoyed this recipe! It was so refreshing! I did make a few adjustments though. Since I couldn't find bulgur at my local supermarket, I substituted it with 1 cup quinoa boiled in 2 cups water till done. Also, I only used half of the onion, because I didn't want it to overpower the salad. Lastly, I added more parsley, fresh mint and lemon to taste. Thanks for the recipe!

The Best Vegetarian Chili in the World

Reviewed: Sep. 22, 2007
I made this the other day for my vegetarian boyfriend. He loves it so much that he ate it for lunch, dinner and breakfast! It was so thick and tasty. I didn't miss the meat at all being an unabashed carnivore myself! I did slightly modify the recipe. I added a tablespoon of sugar to lessen the acidity of the tomatoes, used canned tomatoes with Basil no salt added, added another jalapeƱo pepper, and threw in 24 pieces of tortilla chips to deepen the flavor. I am surprised how much chili this recipe makes. I told my boyfriend to share it with his friends, but he refused and said it was all for him! Thank you for this delicious recipe! :)

Prime Rib Roast

Reviewed: Feb. 14, 2004
This is so simple to make! Very good! I only marinaded the meat for an hour and it still came out very tasty! I had doubts about the recipe at first, because I never thought about using ginger, orange marmalade, brown sugar and beer on prime rib. Nevertheless, it came out fantastic! YUM! The taste is a refreshing alternative to the typical plain old prime rib. This recipe is a keeper!
