Amish White Bread

OMG...this is the best bread! I made it exactly as written. Since I haven't made bread in years I would consider myself a novice. A couple of pointers at least for myself is that I had the water heated to 110F but once I poured it in the "cold" bowl it dropped 20 degrees so I put the sugar and water in the microwave and heated to 115 after adding the water/sugar back to the bowl it was perfect. Other point, my house is cool after waiting for the dough to rise on the kitchen counter for 45 minutes it did not rise at all. I put it in front of my heater and it rose perfectly in about 30 minutes. I am sure there are other ways..perhaps a warm oven that would work great. I do not think this bread it too sweet with the recommended sugar.

Gravy Baked Pork Chops

This a great staple dinner, but I did take another posters advice. Cook it slow it makes it just fall apart, no tough dry pork chops.

The Best Bean and Ham Soup

We thought it was a really delicious soup, we didn't think it tasted like chili as others have posted. I made it almost exactly as written, the ingredients I matched except for the amount of chicken broth, but that is because I had to put it in a crock pot because I was not going to be home (can't leave a stove burning when your not home). So, it did not evaporate as it would have in a pot on the stove. I personally would add some a little bit of cumin just to add to the flavors and make it more of a chili flavor, just my preference. I will make again, with a little bit of adjustment to my taste.

Szechwan Shrimp

Would have rated 4 1/2 stars if available. It was very good, super simple. I had frozen shrimp so I quickly cooked it in a little oil in the frying pan. Took the shrimp out of the pan and cooked the sauce so I didn't overcook my shrimp, the cooking of the sauce only took a couple of minutes. The only thing I would change is perhaps using low sodium soy. It was a little too salty, but I served it over white rice and it absorbed most of the saltiness. But as a salt lover, just a tad too much.

Crab Quiche I

I made the recipe almost exactly as written, added the extra egg because I had fresh crab and added it all (approx. 2 1/2 cups) and splashed Old Bay seasoning and salt and pepper. It turned out divine!! I would have paid big $$ for it! Will definitely make again when crab is in season!

Gourmet Chicken Sandwich

Delicious, I did make it my own by adding avocado, tomato, & lettuce oh and bacon. But I'm sure it would be good with out the extras but it is excellent with them.

Spinach Basil Pasta Salad

I made this salad exactly as directed. It is a great combination of ingredients. But it was definitely lacking flavor as made, everyone loved it after adding some dressing for flavor. I will make again. The dressing we used is made by a local chef, but I imagine a little Italian dressing would taste good too.

Sesame Pasta Chicken Salad

We really liked this a lot, I only gave it 4 stars because by itself it is rather plain (except for the dressing). I took others advice and added snap peas, water chestnuts and slivered carrots. It was delicious. The only change I made to the dressing was I only used 1/2 of the oil called for. Don't leave out the cilantro if you like it... it adds a bit of a complex surprising flavor.

Fish Tacos

I have made these several times...love it. The sauce is the best, I don't like too hot so I don't add Jalapenos. And I have made with sour cream, yogurt...what ever I have on hand and it is ALWAYS delicious. Also when in a hurry I use frozen fish filets of course not as terrific but a great substitute when in a hurry.

Broiled Tilapia Parmesan

Delicious quick fish, I made a few changes. I didn't read the directions properly so I seasoned the fish with the stated seasonings plus I added dill. Glad I did. With the mayo/cheese mixture I left the butter out. I didn't think it would add anything except grease. I will make again.

Prawns of Passion

I had to half the recipe because I didn't have a big enough can tomatoes, but it worked well with 2 people. We had left overs. It was VERY yummy, I think next time I will use less butter it did seem a bit oily. I did a bit of basil to the tomato mixture just because it seemed odd not to have any spice. I did taste it before adding the basil and it tasted great too. I served it over linguine pasta. Because I halved the recipe it was a really quick dinner, the tomato mix didn't take any more than 15 minutes on medium to reduce into a sauce. The only reason I didn't give it a 5 star is because of the butter content. I will update when I try it again...perhaps it makes a huge difference in flavor?

Salmon Rosemary Burgers

Very good! We used sockeye salmon and tried to prepared as directed although I was missing a few ingredients I didn't have Dijon mustard so I just added a little bit of regular mustard. Also I only had dried rosemary...will make with fresh next time love the flavor. Instead of bread crumbs I used Ritz crackers crushed. We cooked them on the George Foreman grill worked perfect. I chopped about two thirds of the salmon and put the rest in the food processor and it made kind of a paste out of the salmon, I think that is why it held together so well.

Creamy Chicken and Wild Rice Soup

Delicious!!! My son who is very picky...even though he is 22...said it was the best soup he has ever had! I used a pre-cooked chicken from the grocery so it was pretty simple. I will make again.

Chicken Tortilla Soup V

Delicious! This was the first time I have ever had Tortilla soup and was very surprised by the flavors! I made it exact except I added some black beans. We did have cilantro, cheese and sour cream (very little)as a topper. It was very filling. I served with corn bread.

Annie's Fruit Salsa and Cinnamon Chips

I took this to a get together thinking it would be something quick for me to make...it is not. BUT it was worth it! It is delicious, I made it exactly as the recipe states the only thing I would change for my own preference would be less sugar in the salsa, I think that there is enough sugar on the chips to add sweetness. Oh and I might add Mango as someone at the party had suggested.

Shrimp Scampi III

Terrific, it was very easy for a quick meal. I didn't have any angel hair pasta so I used Penne, I left the garlic in the oil as others had mentioned. I didn't want to make a separate pot for asparagus so I cut it up and threw it in with the shrimp. It turned out great. Thank you for the recipe.
