Slow Cooker Carolina BBQ

Reviewed: Apr. 18, 2014
5 stars and I didn't even cook it per recipe. Actually, in my haste, I added all ingredients to slow cooker, got to the end of the recipe and OOPS! Oh, well...it was delicious. I did add the liquid smoke. When I served it, I heated up some Stubbs BBQ Sauce I had in the fridge and mixed it with some of the juices. I can't wait to find another pork shoulder on sale and try this again...according to the recipe. I'm betting it will be a 7 STAR recipe. Loved it!

Baked Mushroom Thighs

Reviewed: Feb. 10, 2014
I try not to be critical of recipes as we all have different taste and preferences. I cooked it exactly as written - not a single change other than using 7 thighs instead of 8. It was soggy/mushy and the so called "sauce" was nothing more than a can of bland mushroom soup with milk.

Black Beans and Pork Chops

Reviewed: Mar. 28, 2013
Really enjoyed this! Used what I had - boneless chops, no cilantro. Seasoned chops with garlic powder, cumin, fresh ground black pepper, chili powder. Cooked as noted in recipe. At the very end, removed pork chops from skillet and slightly thickened sauce with a little cornstarch and water and served over steamed rice. This would be good with chicken, too. Frankly, just the sauce served over rice would make a great meal for me.

Calico Bean Casserole

Reviewed: Mar. 25, 2013
Good, but really good the second day. Only changes - added a bit more bacon and fried it first as someone else mentioned. First day was a bit too soupy but after sitting overnight, is now perfect. Great find for me as I like to cook on weekends and have things ready to pull from fridge and heat during the busy weekday evenings. Thanks!

Crazy Crust Pizza Dough

Reviewed: Jan. 31, 2013
Admittedly, I'm not the greatest cook in the world, but this was really bad. I followed the hints given by others - 1 egg and about 1.5 cups of flour. It ended up being a big glob in the middle of the pan until I tried to pat it down. Then it was a gooey mess. It never did spread out in the pan so I ended up with something like really thick pizza crust that remained sort of gummy tasting after about 30-35 minutes of cooking. I'm actually laughing at this whole situation, figuring it must be something I did since so many others had good luck.

Potato Skillet

Reviewed: Jan. 25, 2013
This is similar to something a local restaurant serves. Now I can stay home on Saturday mornings and enjoy! Also, I've fixed this for my dinner a couple of times. I've topped it with a little tomato salsa and it's quick, filling and delicious. Thanks for the recipe. :)

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

Reviewed: Jan. 25, 2013
I loved this! I used dried parsley flakes only because I forgot to buy fresh at the store. Rubbed 3 chicken breast with EVOO, added sea salt and fresh ground pepper. Perfect amount of chicken. Followed another suggestion and cooked entire thing in my iron skillet. It's good reheated except biscuits get a bit soggy and tough in microwave. With that in mind, it does make a huge amount for one person and with grocery prices so high, I refuse to waste anything. I'm going to try freezing some of the filling, thawing, heating and topping with a biscuit for individual servings. Definitely a keeper!

Chicken Soup II

Reviewed: Sep. 11, 2012
This was really, really good! I added a bit more celery/carrots just so I could get rid of them. Also, I added almost an entire 32 oz box of chicken stock. I didn't have the tortellini but will try with that next time. This will become a regular, I'm sure.
