Red Garlic Mashed Potatoes

These were ok... Not my favorite mashed potatoes. The garlic was just too strong and my younger daughters could not handle it. Also, do not add the sugar!

This was fabulous! I used canned tomatoes the second time I made it. I recommend draining them if you do use canned or it will be soupy.

This is a very easy recipe to follow. I have made big biscuits and smaller ones using this recipe. They always turn out great. I just make sure I butter the tops right after they come out of the oven.

Pumpkin Bread IV

This was a great recipe. I only wanted to make one loaf of bread (I converted it to 12 servings) so I chose to use one whole can (14oz) of pumpkin. I reduced the oil to 1/4 cup and probably could have used less w/ that much extra pumpkin. I also put a little more flour in. It turned out very rich but very good. I would have liked it a lot more if I had put in some walnuts but I have a young daughter so I didn't. Oh and make sure you bake it long enough.

Brownies with Peanut Butter Fudge Frosting

These were good. But, I used the alterations that were suggested- the semi-sweet/ pb chips w/ 1/4 cup pb... I think I would have liked it the original way better. This tasted almost like very thick/ very rich caramel w/ a hint of peanut butter on a brownie. I love the taste of pb so I should have kept to the recipe. I will try them again that way. They were not bad just not what I wanted. Everyone who has tried them at my house has been able to eat half of one because they are sooooo rich.

Flourless Peanut Butter Cookies

These are great JUST the way they are. I think if you're going to add all kinds of other stuff you might as well use another recipe. The simplicity of this recipe is what makes it so great. These don't make a lot if you use the 1 cup pb, 1 egg, 1 cup sugar measurements. I think that they are so sweet so I make mini cookies instead of huge cookies. I just bump the cooking time down to about 6-7 minutes. Just watch them. Very yummy!

Zucchini Risotto

This was an excellent recipe. The flavor was perfect. The only changes I made were to add 5 or 6 leaves of fresh basil, I used an entire zucchini instead of half, marinated sun dried tomatoes and I used more parm. Oh and freshly ground pepper. Yum!

Best Brownies

I did not like these. I made them twice and there is just something off w/ them. The frosting did not turn out even w/ the alterations (1/2 the powdered sugar + melted butter). Not a fan but I gave them two stars because they could have been worse.

Three Cheese Manicotti II

This turned out fantastic. I didn't realize it would make so much though. I used the 6 serving recipe and I ended up with 2 pans full. We saved one for another night. It was great!

Zucchini Parmesan

I thought this turned out great. My husband enjoyed it as well. I did not boil the zucchini. Instead I sauteed it with the onion and garlic until the onion was tender. I also did not use thin slices of zucchini. I prefered larger slices. I recommend using a chunky spaghetti sauce. I used mozzerella and parm and I baked it at 375 until the cheese was brown. It was a little watery but the zucchini was not mushy at all.

Easy Apple Crisp

This turned out to be the best apple crisp I've ever had. Everyone who tried it LOVED it. I used the advice of the others though. I put lemon juice, cinnamon and nutmeg on the apples, I used 1/2 cup water, 1/2 cup brown sugar and 3/4 cup oatmeal. I also used a yellow cake mix. Only cook it for about 40-45 minutes. It was fantastic!
