Owen's Veggie Stir-Fry

I made this for my family of 3 meat-loving boys & 1 carnivorous hubby. I pretty much stuck to the recipe and served it over hot brown rice. My hubby got home late and there was no rice left and about 1/3 of a serving of the veggies left. Needless to say, it was a hit! This is going in the rotation! We are gluten free and this was very easy to adapt it as such, just used GF soy sauce! Good recipe!

Quinoa and Black Beans

I made this on Friday afternoon, put it in the cooler and my family of 5 took it camping to eat for lunch on Saturday. It wasn't quite enough, no way is it 10 servings if you're eating it as a meal like we did. But it traveled well. The seasoning wasn't all that I'd hoped but I will make it again and experiment a little. The only change I made to this recipe was I used a can of corn instead of the frozen corn as that is what I had.

Spaghetti Squash I

I was hoping it would have a bit more flavor than it did, especially since I added salt, pepper & Italian seasoning and doubled the basil. But my hubby & all three of my meat loving sons really liked this dish, there wasn't a bite left! Next time I will add more of everything; more olives, more tomatoes, more basil, more onions, more seasoning. But we all liked it & I will be making it again. Oh, I baked my squash for 45 minutes in the oven & then finished it off in the microwave for 10 minutes. 30 minutes is NOT enough.

Chef John's Italian Meatballs

We had to make a few diet modifications but this recipe is AMAZING!! One of my sons is gluten-free & another is dairy-free so I had to use gf 'bread' crumbs and unsweetened almond milk. I had 2 lbs ground beef, no ground pork, but this recipe is so solid that even with all of these changes it still ROCKED. I have made it twice and it was perfect both times. Thank you Chef John!! It's a crowd-pleaser, even for my hubby & oldest son who have no dietary restrictions.

Chicken Breasts with Lime Sauce

This chicken was AMAZING!! I made this for my family of 5 and there was none left. Next time I will double the sauce; it's sooo good! I didn't have fresh chives on hand so I used minced garlic instead - turned out DELISH!! I followed the advice of some reviewers and replaced half the butter with chicken broth. This recipe is a keeper!!

Easy Maple Pork Chops

This was SO simple and very good. I really don't like to cook that much but I'm making this recipe for the second time as it is SO easy and tastes great. The pork was perfect & the sauce was delicious. I seared the onions and pork together and I think I may throw some baby carrots in the oven with the chops this time. If you're thinking about trying this recipe DO IT; you wont be disappointed. My hubby and 3 boys liked it as well.

Garlic Red Potatoes

Easy & flavorful; what more could you ask for? My husband, who will eat anything but likes hardly anything, actually said he likes them! And my 3 sons liked them as well. I loved the flavor the lemon juice gives, not really 'lemon-y' like you'd think, but very good! I will make these again! FYI they do take longer than the time posted to cook.
