Owen's Veggie Stir-Fry
I made this for my family of 3 meat-loving boys & 1 carnivorous hubby. I pretty much stuck to the recipe and served it over hot brown rice. My hubby got home late and there was no rice left and about 1/3 of a serving of the veggies left. Needless to say, it was a hit! This is going in the rotation! We are gluten free and this was very easy to adapt it as such, just used GF soy sauce! Good recipe!

Quinoa and Black Beans
I made this on Friday afternoon, put it in the cooler and my family of 5 took it camping to eat for lunch on Saturday. It wasn't quite enough, no way is it 10 servings if you're eating it as a meal like we did. But it traveled well. The seasoning wasn't all that I'd hoped but I will make it again and experiment a little. The only change I made to this recipe was I used a can of corn instead of the frozen corn as that is what I had.

Spaghetti Squash I
I was hoping it would have a bit more flavor than it did, especially since I added salt, pepper & Italian seasoning and doubled the basil. But my hubby & all three of my meat loving sons really liked this dish, there wasn't a bite left! Next time I will add more of everything; more olives, more tomatoes, more basil, more onions, more seasoning. But we all liked it & I will be making it again. Oh, I baked my squash for 45 minutes in the oven & then finished it off in the microwave for 10 minutes. 30 minutes is NOT enough.
