Ice Cream Cake

I made this Saturday to have for desert with Sunday Dinner. With the container of ice cream I had, dividing it in half was going to waste alot more cake than I wanted to. So I split the ice cream into 3rds. It made a pretty good fit to a 13x9. I made a Milk Chocolate cake with Vanilla ice cream. Instead of frosting, I used "Magic Shell" in a kind of checkerboard design and sprinkled a few chopped pecan pieces on top. It looked wonderful and was sooo very easy. Everyone raved. Jalapeno Popper Spread

This does taste like poppers. I used about 6 fresh chopped jalapeno's and baked it for about 20 min @ 300.

Chocolate Pudding Cake II

Oh my gosh!! Chocolate heaven!! I NEVER double a recipe the first time I make it, but I'm glad I did this time. It would have all been gone in minutes. I didn't have a 9" square pan, so I doubled it. It was a nice fit into a 13x9. Just the right sweetness. I served it with whipped topping. It looked as good as it tasted. Thanks for sharing this.

Okra and Tomatoes

I've made this a couple of times now. The first time I followed the recipe and it turned out great. The second time, I found I didn't have any canned tomatos, but I had a few roma's , so I diced those up and added a little tomato sauce. It still turned out perfect. Every one at my house loves it either way. I sometimes add a little Creole seasoning for a little extra kick. This is one of those recipes that's just real hard to goof up. Thanks for posting a great recipe!

Mom's Goulash in the Microwave

I"m giving this 5 stars because I, myself, made a couple of goofs. I did an "oops" with the cayenne pepper, which doesn't bother my family much, and the tomato sauce I had were 8oz cans so I felt like it could have been better with a little more tomato sauce. Oh, since I made it on my stove, I sauteed the onions & celery. Then browned the ground beef. Then added it all together in a large skillet and let it simmer a few minutes. It was good and I will be making it again . Thanks!

Lobster Bisque I

I may be the odd ball here, but this was not very good at all. Seems like it had too much tomato in it. The tomato way overpowered everthing else. It was just tomato soup with other stuff in it. My husband will eat almost anything. He didn't eat this.

Cilantro Serrano Cream Sauce

I've decided I really like this. I followed this recipe exactly and let it meld a day or so. I used it on some broiled tilapia filets and it was good. DH said it tastes a little bit like a spicy ranch dip. (?) I think next time I'll do as Krazykhat suggested and add a squeeze of lime. My husband and I both think this would make a great dip for a veggie tray. I'm glad I tried it. This recipe will come in handy. Thank you for posting.

Chocolate Earthquake Cake II

My first attempt was a disaster. I pulled this beautiful cake out of the oven, tripped over the dog, and it landed upside down on my kitchen floor! So, a couple of days later, when I was through being mad, I tried it again. This is a wonderful recipe! The only thing I am going to change is to up the cooking temp to 350 and lower the time to about 35-40 minutes. Otherwise, this is good stuff.

Family's Creamed Spinach

I've been looking pretty hard for a good creamed spinach recipe lately and I think I have found it. It's very easy and really good. The first time, I made it straight from the recipe. The second, I added about 1/4 cup (maybe a little less) of half and half. That seemed to give it something I thought more suitable. Either way, it's very good, thanks for the post!

Shredded Beef for Tacos

I can't say enough good things about this recipe. It sounded too easy. I was amazed! I served this with grated cheese, sour cream and pico de gallo. To heck with regular old ground beef sytle taco's. This is the best!

Beef and Bean Chimichangas

This is really a very good recipe. It is easy to make and well liked. It was just my husband and I, so I froze what I didn't use for another time. It was nice to just thaw it, wrap and bake. I made it a second time for guests at a casual get together, they were gone before I ever got one. It's also very easy to adjust if you are missing something or just want more spice. In other words, I think this is a great all around recipe. Thank you, I'll be keeping this one.

Candy Apple Jelly

I got 7 8oz jars out of this. It is a beautiful rosy red color. It tastes like baked apples, which I love. Nice recipe. Very easy. These will be included in the gift baskets I'm making. Thank you for the post.

Oklahoma Nut Candy

I'll give the recipe 5 stars but I think that the instructions need some clarification. I have a good heavy medium 1 1/2 qt sauce pan that I used to melt the sugar in. I used a 3qt pan for the sugar/heavy cream mixture. I considered a 3qt pan a "large" sauce pan. Not so. When making this, keep in mind that when you add the baking soda, the mixture is going to "bubble up". It's going to bubble up A LOT!!! This bubbled up and OVER the top of my pan and all over the top of my new stove and ran down into the burners. I spent the 20 minute cooling period cleaning up the mess. Once I got it all under control, the candy was good. I would use a pan closer to a dutch oven sized pan next time. Yes, I will make it again, but I'll be a little wiser about it. :)

Hunter Style Chicken

Pure goodness. I only used the breast & thighs of a whole cut up chicken in this (there was only two of us). I coated my chicken w/ some flour and then browned it and set it aside. I added a couple of tbs of margarine and sauted the mushrooms in that pan along with a couple of shallots that I subbed for the onions. I added the wine and then reduced it, then added some chicken broth, about 1/2 cup and seasonings. I peeled and seeded the tomatos (I use roma's), quartered them and simmered it all together for about 30 minutes. Served it over steamed absolutly "guest worthy" recipe.

Absolutely The Best Shrimp Scampi

Made this last night for dinner. It was very good. I think next time I will take the suggestions of another reviewer and add some green onion and diced roma. I think that will bring something very nice to the dish. I would like for it to have been a bit more saucey since this does not really produce any sauce. Thanks for the post!

Hearty Hash Brown Dinner

If I could rate this higher I would. I don't have a crock with a timer. I adapted this to cook in the oven so I could make it one evening after work. I just thawed everything out and browned and drained the beef then assembled in a casserole dish. I did mix the milk, soup and cheese (not quite as much cheese as the recipe called for)in a bowl and microwaved it until the cheese melted. I poured that over the meat & veggie mixture and baked in the oven until it bubbled. Then I topped it with the onions and served with warm sourdough bread. This is delish. And, it was a snap. Thank you for a recipe I plan to use again soon!

Slow Cooker Cassoulet

As per previous reviews of this being too salty, I held back on salting it. I will next time use the chicken broth instead of the wine. I subbed great northern beans instead of the cannelini, and i did end up salting it a bit at the end. My recipe did not start to "break down" and thicken until about the 7th hour. I did use bone in breast/ that's what I had on hand and prefer to use since they dont dry out as bad. Served this with "ali's amazing bruschetta" also from this site. This was a great dinner on a end of the season surprise cold night. Thank you for sharing!! It was well received.

Orange Pineapple Sherbet

Easy and refreshing. The recipe as written will make about 1 gallon. I had to cut the recipe in half since my ice cream freezer is a 2 quart. I will definately keep this recipe handy. It really is very good. Thanks!

Fried Spinach

I've been making this for many years. My mother raised us on it, I've raise my kids on it. We typically don't add the bacon though. Friends would come and see me making it and look as if I'd lost my mind. But, once they tried it....Anyway, I'm glad to see some one post this. It's different but worth a try.
