Central American Tacos

I wish I had paid more attention to the other reviews, as written there were way to many potatos, could have used more spice, and the sauce was just like guacamole. I seriously doubt I'll make this again, there are beeter reicpes out there.

Beer Cheese Soup III

This is wonderful. I doubled the recipe for a dinner party, it was so well liked that some took bowls of it home with them. I will most certainly make this again. Thanks for a warm and filling recipe.

Oklahoma Nut Candy

I'll give the recipe 5 stars but I think that the instructions need some clarification. I have a good heavy medium 1 1/2 qt sauce pan that I used to melt the sugar in. I used a 3qt pan for the sugar/heavy cream mixture. I considered a 3qt pan a "large" sauce pan. Not so. When making this, keep in mind that when you add the baking soda, the mixture is going to "bubble up". It's going to bubble up A LOT!!! This bubbled up and OVER the top of my pan and all over the top of my new stove and ran down into the burners. I spent the 20 minute cooling period cleaning up the mess. Once I got it all under control, the candy was good. I would use a pan closer to a dutch oven sized pan next time. Yes, I will make it again, but I'll be a little wiser about it. :)

Mom's Goulash in the Microwave

I"m giving this 5 stars because I, myself, made a couple of goofs. I did an "oops" with the cayenne pepper, which doesn't bother my family much, and the tomato sauce I had were 8oz cans so I felt like it could have been better with a little more tomato sauce. Oh, since I made it on my stove, I sauteed the onions & celery. Then browned the ground beef. Then added it all together in a large skillet and let it simmer a few minutes. It was good and I will be making it again . Thanks!

Family's Creamed Spinach

I've been looking pretty hard for a good creamed spinach recipe lately and I think I have found it. It's very easy and really good. The first time, I made it straight from the recipe. The second, I added about 1/4 cup (maybe a little less) of half and half. That seemed to give it something I thought more suitable. Either way, it's very good, thanks for the post!

Firecracker Grilled Alaska Salmon

I made this over the weekend. I was a little skeptical about cooking it directly on my grill. My other salmon recipe, I cook on the grill on foil, but it did great. Maybe I expected too much from all of the great reviews. It marinated 5 hours. It looked beautiful and delicious, but like I said, maybe I expected to much. It was good, but it didn't knock my socks off. But thanks for posting.

D's Famous Salsa

As written, it's pretty good, but I prefer to make a couple of changes. I like to add some roasted Serrano peppers instead of the green chiles, and little salt . My husband can't get enough of it. Thanks for a great recipe!

Amish Macaroni Salad

I'm only giving this 4 stars because as written it would have been too sugary and drowning in dressing. I too cut back to half of the sugar and could have cut back even more. I also cut the Miracle Whip in half. Two cups is definately overkill. I didn't have any dill relish, so I fine chopped some dill pickles. I also added a bit of Garlic Powder and a dash of Accent. I will be making this again with these changes. Thanks for the post!

Beef and Bean Chimichangas

This is really a very good recipe. It is easy to make and well liked. It was just my husband and I, so I froze what I didn't use for another time. It was nice to just thaw it, wrap and bake. I made it a second time for guests at a casual get together, they were gone before I ever got one. It's also very easy to adjust if you are missing something or just want more spice. In other words, I think this is a great all around recipe. Thank you, I'll be keeping this one.

Shredded Beef for Tacos

I can't say enough good things about this recipe. It sounded too easy. I was amazed! I served this with grated cheese, sour cream and pico de gallo. To heck with regular old ground beef sytle taco's. This is the best!

Corn Casserole II

This is very good. I made this last night. We were having a Mexican dinner. With that in mind, I added a bit of chopped jalapeno and a bit of chopped onion. They loved it. It did take a bit longer than 30 minutes to cook, I think I gave it about 40. But that may just be my oven. We'll be having this again. Thanks for sharing.

Fried Spinach

I've been making this for many years. My mother raised us on it, I've raise my kids on it. We typically don't add the bacon though. Friends would come and see me making it and look as if I'd lost my mind. But, once they tried it....Anyway, I'm glad to see some one post this. It's different but worth a try.

Boudreaux's Zydeco Stomp Gumbo

Very enjoyable and a little different twist from most gumbo's. I did a couple of things differently. First, the roux seemed thin, so I added another 1/4 c of flour. I increased the chicken to 1 pound and boiled it lightly in water w/ cajun seasoning and a bay leaf so I could use the stock from that. I took it out before it was completely done, diced it, and then browned it with the sausage. I also used a full pound of sausage too. Otherwise I don't think it would have had enough meat in it. It was very creamy and had lots of flavor. I also added just a little file` to it. This is a very good recipe.

Chocolate Earthquake Cake II

My first attempt was a disaster. I pulled this beautiful cake out of the oven, tripped over the dog, and it landed upside down on my kitchen floor! So, a couple of days later, when I was through being mad, I tried it again. This is a wonderful recipe! The only thing I am going to change is to up the cooking temp to 350 and lower the time to about 35-40 minutes. Otherwise, this is good stuff.

Cajun Dirty Rice

We loved this recipe, but had to make a couple of alterations. I used only 1 can of Kidney beans as that what all I had on hand. But, I am in agreeement with other viewers, one box of rice mix is not enough. It only makes dirty meat:)so i added another box and 2 more cups of water. Also I used Hot Pork Sausage in place of the beef sausage. It makes a whole lot and every one enjoyed it. Thanks for posting.
