No Bake Cookies II

Reviewed: Apr. 7, 2014
These are wonderful! I am not a big peanut butter person, but wanted a good chocolate no-bake cookie. I did boil the mixture for closer to 3 minutes, rather than the recipes suggested 1 minute. And as for the oats, I free-hand poured them until the mixture looked the correct consistency. These were set after about 5 minutes in the freezer. They have a nice chocolatey taste, and the sweetness isn't too strong. Will definitely be repeating this in the future.

Chocolate Cream Pudding

Reviewed: Feb. 15, 2014
I fudged the ingredients a little bit, using 3/4 cup brown sugar instead of white (being out of sugar wasnt gonna stop me from making pudding!), and I free-handed the milk chocolate peices, and 1 tsp cinnamon, 2 tbsp Ovaltine. Delicious! Will make again, as i made it.

Apple Cinnamon Oatmeal

Reviewed: Jan. 30, 2014
I made this minus the apple juice (only because I didnt have) and added a 1/2 cup brown sugar. This was super delicious! I think next time I will make sure to have apple juice on hand to give this an extra punch of flavor.

Teriyaki Sauce and Marinade

Reviewed: Jan. 25, 2014
As others have stated, I didn't like the recipe as is. Even after attempting again with LOTS more sugar, it was still pretty salty, but after about 20 minutes of reduction (where the recipe calls for 5), it had finally reached the taste and consistency I had been looking for. I marinated chicken in it, shredded it, and used it in a fried wonton. I thinned out the other half of the sauce with more mirin for dipping, and it was excellent. All in all it was good, but was no longer the original recipe by the time I adjusted it to my taste.

Chinese Chicken Fried Rice II

Reviewed: Jan. 9, 2014
This is really good. What I like most about it is that its a good starter recipe, you can swap the protien, or add any of your favorite veggies, and its only going to be more delicious. I use green onions in this recipe instead of white, and throw them in last. For a creamier version, toss the beaten egg directly with the rice mixture.

Super Easy Doughnuts

Reviewed: Jan. 2, 2014
The milk amount seemed odd, so I used the adjusted amount of 1/2 cup, with 1 tsp apple cider vinegar (only vinegar I have),. These are a delicious fried cake doughnut. They come out with a nice golden exterior and a soft cakey inside. The doughnuts have a weak flavor, even though I doubled the vanilla. I made mostly holes and a few free-for donuts, and rolled them in cin/sugar. Overall delicious, and I will continue to play with the flavor.

Best Brownies

Reviewed: Dec. 28, 2013
I make these using the traditional creaming method, which produces a cake-like brownie. I have made these on several occasions now, and have been a hit every single time. I have not used the frosting recipe provided. On one occasion, I substituted the cocoa powder for flour, and added an additional 1tsp vanilla, and tossed in chocolate chips to make blondies.

Scottley's Basic Yellow Cake

Reviewed: Dec. 10, 2013
This is an exellent alternative to a box mix! Its simple to make, looks a beautiful golden brown color when done. The taste isnt out of this world, but still pretty good as is, and is really moist. It has a dense texture, while still feeling fairly light to eat. I made into a 9x9 square cake, and 12 cupcakes. Topped with a Nutella buttercream. Yum!

Butterscotch Oatmeal

Reviewed: Sep. 18, 2013
I have made the recipe as is, with an additional sprinkling of pecan pieces to top. I am normally not an oatmeal person, but this is utterly perfect. So creamy and good, with a perfect sweetness level (have no idea why so many people think its too sweet) ive been making it weekly since Ive discovered this recipe. Easy to memorize too! I wouldn't change a thing! Wish the writer's directions were a tad more specific, timing wise.

Onion Jam

Reviewed: Jun. 8, 2013
Ive made this a handful of times now, with the only change being 2 tsp minced garlic added. First few times I followed directions exactly as is. The other day I did it a bit differently, and I think it came out better. I sauteed the onions first, and once they turned translucent, I added BROWN sugar to them, and a dash of Worcestershire. I find that this gave it a richer taste, and helped it set up better in the end. If your a fan of caramelized onions, this is a jar to keep in the fridge! Don't be afraid to make chopping onions a family affair, because I guarantee you'll want to make more than one jar (works out be about 7-8 smaller onions per 12 oz jar when cooked down)!

Creamy Rice Pudding

Reviewed: Jan. 12, 2013
This is fantastic! It was my first attempt at rice pudding, and it has to be the most delicious thing ive made in awhile! I used a can of evaporated milk for the first 1 1/2 cups of milk, I also made the addition of cinnamon and regular raisins, instead of golden. I also made sure to temper the egg. So good, thank you so much for a wonderful recipe!

Costas French Market Doughnuts (Beignets)

Reviewed: Jan. 1, 2013
These were really good! I did make the addition of 1 Tbsp vanilla and 1 Tbsp cinnamon to the dough, and it sat closer to 2 hours in the fridge. I also free-handed circles instead of rolling and cutting. Everyone really enjoyed them and said that they were fantastic, but would be even better filled! Will definitely reccommend adding the vanilla and cinnamon, or else this would have been a 2 star recipe for blandness. Very good recipe for my first ever doughnuts.
