Stove Top Tamale Pie

I made several changes to this recipe, and it was pretty good. I added onion to the beef, removed the beans, used 15oz can of tomato sauce instead of 8oz can and removed the water altogether. Also added a 15oz can of corn, a dash of crushed red pepper, and used a Monterey Jack and Cheddar cheese mix. Right before serving, I also added some fresh cilantro on top.

Sherry Sour Cream Chicken

Tasty, but the cooking time was too long. The chicken came out a little dry, and the sauce around the chicken was burned. I'd cut it to about 45 minutes like another reader suggested. I also added a little garlic powder to the sauce, and a pinch of Cajun seasoning mixture to the chicken before browning.
