Artichoke Spinach Lasagna

Reviewed: Dec. 22, 2008
This was fantastic. I plan to add some mushrooms, and I left off the feta because I dislike it, but otherwise easy as can be. I even used no-boil lasagna noodles which made it even easier. Get yourself a good quality pasta sauce, it will make a difference!

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Nov. 15, 2008
As far as I'm concerned, this is THE carrot cake recipe. Everyone I have made it for just melts the moment they put it in their mouht. HOWEVER, I do make 1 1/2 times the frosting because I like to make 3 round layers and slather the frosting in between each one. YUM! Sometimes I add a bit of shredded coconut to the batter and the frosting for a lil extra something.

Chai Tea Mix

Reviewed: Nov. 4, 2008
I really enjoyed this mixed with warm milk. I did as the author suggested and added the nutmeg and allspice. I plan to add the white pepper when I buy some. Only down side is that this made a ton and now I have leftover instant tea and dry milk that I'm not sure what to do with.

To Die For Blueberry Muffins

Reviewed: Oct. 13, 2008
OK, clearly I did something wrong. The streusel just melted into the muffin making them VERY greasy. not pleasant in the mouth. flavors were pretty good though, I think next time i will use half or less of the topping. I also liked that it didn't make too many.

Poblano Chile Enchiladas a la Gringa

this was very bland to my entire family. it has potential, but would need a good bit of tweaking to become 5 star. I will not be making this one again

Chantal's New York Cheesecake

Reviewed: Jul. 24, 2008
The flavor of this was great in the center, but the edges got quite dry... I did exactly as the recipe said (left in oven 6 hours) but still got huge cracks. I think I will actually put in in a water bath instead of having a pan below and have it cook a little less time to account for the oven staying very hot even after turning it off over the 6 hour stay. Great flavor, just not quite perfect all the way through.

Poblano Corn Chowder

Reviewed: Jun. 4, 2008
Ok, I give this five stars AFTER a few changes: Personally I would add extra poblano as the flavor was not as strong as I would have liked. I will leave out the sugar altogether next time, the sweetness of the creamed corn was plenty. I also doubled the amount of kernel corn. I didn't have any idea where to get the lobster base or the chile d'arbol, so I just skipped them and can't say they were missed. I just used milk instead of half and half, it was plenty rich and thick that way. Overall, this is very good and has a nice combo of flavors going on. Ate it wish a lime-cilantro fish and some fresh tortillas and it was a hit!

Blackberry Cobbler II

Reviewed: May 13, 2008
I doubled the topping ingredients as other reviews suggested, and boy am I glad I did. Any less and it would not have covered the whole thing. It was tasty, but I gave it 4 stars because for me it was too sugary. As a Texas girl, I adore blackberry cobbler, and I will try this again but with 25% less sugar all around. It did make a nice gooey filling and the dough part was not too heavy or crumbly...YAY!

Baked Asparagus with Balsamic Butter Sauce

This is the only way we make asparagus anymore. I always have the ingredients on hand, it is fast, and hard to mess up. Non-asparagus lovers have been converted by this recipe!

Strawberry Chocolate Mousse Cake

Reviewed: May 5, 2008
If you love chocolate, this is a MUST recipe. It is rich, creamy, and decadent. I have made it with and without the strawberries. Personally, I like it better with them. I think I will try a mix of strawberries and raspberries next time. Yum! This is very easy. The amout if whipping cream needed makes it a bit more pricey than some other dessert recipes, but to me, totally worth it!

Dog Treats I

Reviewed: May 5, 2008
My dog LOVED these. She stood by the oven during the last few minutes trying to get to what was inside! Sometimes I make them sweet with the peanut butter and sometimes savory with 1 cup cheddar cheese and 1 teaspoon beef buillon. She enjoyed both. I make a whole batch, freeze most in ziplock bags, and take them out a bag at a time. They will mold if left out too long.

Grilled Salmon I

Reviewed: May 5, 2008
Loved this! It is so simple, but the marinade flavor and the wonderful grill taste of the salmon make it restaurant-quality cooking. I was pleased that the recipe is cost effective, fast, and nearly impossible to mess up. I didn't (and wouldn't) alter a single thing :)

Caramel Turtle Brownies

Reviewed: Apr. 19, 2008
I'll admit, I'm not a big fan of brownies or cake, but when my cousin made these I felt compelled to at least try one. This is without a doubt one of the best things I have put in my mouth. It is so moist and gooey, I ate it with some vanilla icecream. My only complaint, or warning, is that the caramel layer is very chewy and tends to get rather stuck in the teeth. I recommend not serving this to company because it is difficult to eat in a dainty manner :)

D's Famous Salsa

I cannot believe how fresh this salsa from canned tomatoes tastes! I made this for a party (full of Texans by the way) and was shocked that we ran out. Cannot imagine an easier, more cost-effective, and more widely pleasing than recipe!

Butternut Squash Soup

Reviewed: Nov. 12, 2007
What a flavor! I didn't make any changes except using 3 cups broth instead of water and buillon. Blend it really well for it to be smooth. HOWEVER- there is no way this makes 6 servings unless they are very small servinges. We ate it with a side salad and it only made about 3.5 servings.

Angel's Yummy Bruschetta

Reviewed: Nov. 12, 2007
This didn't really do it for me, it was very bland. Some fresh basil and maybe a little balsamic vinegar would punch it up a little. Currently, most of what I taste is onion and tomato, which I like, but the other flavors just aren't there.

I added some additional salsa to this recipe after making it once before, and that made it just about perfect. This would be a fantastic vegetarian main dish.

Very yummy. We added Italian seasoning to the breadcrumb mix to jazz it up a bit since we used plain breadcrumbs
