Special Buttercream Frosting

Reviewed: Jun. 17, 2013
this is delicious!! I followed the suggestion of some other reviewers, and used 1/2 cup butter and 1 1/2 cup shortening. I also add 2 tsp almond extract, but that is just because I like almost extract. I have used this 3 times for rather large cakes I decorated, and I had enough icing to spare. If you are going to be using this for decorating/piping, I recommend not using more than 1/2 cup of butter. Great recipe!

Broiled Tilapia Parmesan

Reviewed: Apr. 26, 2013
The first time I made this, I followed the recipe; my husband said it was the best fish he'd ever had! I made it again this evening, and made a few changes I saw in the reviews. I added some bread crumbs, decreased the mayo (hubby is not fond of it) and added the paprika. It was even better than the first time! This recipe is a keeper.

Garlic Red Potatoes

Reviewed: Feb. 13, 2013
Delicious! The only changes I made is cutting the potatoes into large cubes instead of quarters, and I chop about half an onion and add it to the mix. I also use an 9x13 baking dish, not an 8x8. My hubby LOVES it, I make this often.

Broccoli and Tortellini Salad

Reviewed: Dec. 28, 2012
I love broccoli salad, and this one with the pasta is so good! I can make it as a complete dinner, and my husband (who is not crazy about veggies) always goes back for seconds. If I am short on time, I use Lite Italian dressing instead of the sugar and vinegar; that tastes almost the same. We do leave the raisins out, as neither of us like them. Very good!

The Best Sweet and Sour Meatballs

Reviewed: Dec. 28, 2012
I made the sauce exactly like the recipe said; the only thing I did differently was I cooked the sauce for about 5 minutes to thicken it. I used frozen meatballs (beef, about 28 meatballs in the bag; the sauce covered all of them with and then some!), and put everything in the crock pot for about an hour and a half. It thickened up a little more, and was pretty good! My friends all said they liked it as well. I will make this again, and next time I might try adding some ketchup, like one reviewer suggested. Overall, a good recipe.

I took this to two different parties, and it was gone both times. Easy to make, and totally delicious!
