Cooking calms me down; whenever I am in the kitchen, I feel like I can be as creative as I want. I like to cook for my new husband, and he likes to eat! I am an administrative assistant at a high school, which means I have awesome hours; I really like my job!
My favorite things to cook
I enjoy cooking and baking...I guess the thing I bake best is apple cake. Cooking...I just make things I like to eat! Lately I have been doing a lot of kabobs; they are easy and yummy.
My favorite family cooking traditions
My mom makes the best soups and casseroles! She does not use recipes, just what leftovers are in the freezer or fridge. All my aunts are excellent cooks, one owns a bakery, another a bed and breakfast. My grandma taught me how to can and make preserves. My family likes to eat! My mom said I started helping her in the kitchen when I was 3; I'd get my little stool and stand there watching her. She is a great teacher, and she taught me almost everything I know about cooking.
My cooking triumphs
The apple cake and cookies I made for my man when we first started dating...he said they won him over:} Recently I made a super adorable owl cake for a baby shower...that is my latest triumph!
My cooking tragedies
When I was younger, I was still learning the difference between teaspoons and tablespoons. I put 2 tablespoons of salt in the cookie dough instead of 2 teaspoons. The cookies turned out terrible.

Special Buttercream Frosting
this is delicious!! I followed the suggestion of some other reviewers, and used 1/2 cup butter and 1 1/2 cup shortening. I also add 2 tsp almond extract, but that is just because I like almost extract. I have used this 3 times for rather large cakes I decorated, and I had enough icing to spare. If you are going to be using this for decorating/piping, I recommend not using more than 1/2 cup of butter. Great recipe!

Broiled Tilapia Parmesan
The first time I made this, I followed the recipe; my husband said it was the best fish he'd ever had! I made it again this evening, and made a few changes I saw in the reviews. I added some bread crumbs, decreased the mayo (hubby is not fond of it) and added the paprika. It was even better than the first time! This recipe is a keeper.

Garlic Red Potatoes
Delicious! The only changes I made is cutting the potatoes into large cubes instead of quarters, and I chop about half an onion and add it to the mix. I also use an 9x13 baking dish, not an 8x8. My hubby LOVES it, I make this often.
