Chef John's Gazpacho

This was very good gazpacho. We love garlic, so I added a little more, but it was too much. John's portions were right on. I used a regular cuke, peeled it, and it turned out fine, in fact, I added some more and it was good. We will definitely make this again this summer. We're trying to do meatless Mondays, and this fits well with that plan.

Basic Ham and Bean Soup

I substituted 6 cups of chicken stock for 6 cups of water. I also don't love the smell of white pepper, so I used black pepper. Also waited to add the salt until the end because of concerns about making the beans tougher and overwhelming the salt because of the ham added later. I did the quick soak method for the beans and cooked them a bit longer than described and it was fine. I often forget to soak the beans until the next day when I want to eat them. This soup is a wonderful meal when served with some warm bread and a fresh salad. I did the traditional spinach salad for this dinner."

Quick Chicken Piccata

I make this recipe really often, I would say at least one a month maybe twice. First, be sure you are starting out with really high quality chicken. I've made it with regular breasts from my local grocery and then with free range chicken breasts from a store in our area, New Seasons. World of difference. Good poultry is, in my opinion, worth a little extra money to get off to a great start. I follow the recipe exactly as written, to the letter, and absolutely love it. It's fresh and relatively simple and well worth repeating.

Roasted Garlic Cauliflower
