Zucchini and Corn Topped with Cheese

Reviewed: Jul. 27, 2004
this was an OK recipe. the diced tomatoes seemed to make everything go to mush. next time i might leave them out.

Super Sloppy Joes

Reviewed: Jul. 27, 2004
i halved the recipe for only 4 servings, ommitted the celery (none in the fridge!), and used jalepeno peppers instead of green peppers (my husband likes a kick). these turned out really good! i used the ketchup, but next time i may use the bbq sauce as others have recommended. all in all, a great sloppy joe recipe that i will make again and again!

this was a pretty good recipe. quite simple and easy to put whatever you have on hand, in.

Teriyaki Wraps

Reviewed: Apr. 13, 2004
i followed some of the other reviewer's suggestions and only used 1 cup of teriyaki, and halved the soy sauce. this still made a TON of stirfry! i'd say this recipe, as is, makes at least 8 servings. next time i will use considerably less rice. it also felt like it was missing some sort of spicey something which i still haven't figured out. i also used 3 frozen (pre-cooked)teriyaki chicken breasts which i threw into my wok with the veggies. we also used quesidilla shells for the roll ups. all-in-all a good recipe that i will most likely make again.

Parmesan Chicken II

Reviewed: Apr. 13, 2004
this was an easy chicken recipe, but i didn't really like the drumsticks. next time i'll use breasts. i also added garlic powder for some extra flavor. if you do use drumsticks, i'd recommend losing the skin.

Ricotta Stuffed Squash

Reviewed: Apr. 13, 2004
i made this dish for thanksgiving & everyone loved it so much that my mother-in-law requested i make it for easter. i ended up having extra spinach mixture leftover. the next day my husband put it on french bread and topped with tomato sauce. he popped it in the oven until it was warmed and it made a very yummy side dish for dinner.

Garden Stuffed Baked Potatoes

Reviewed: Feb. 12, 2004
I thought this was a great recipe. Its a little tough to get the potato out of the skin without breaking it (but I'm also a beginner). I'll definitely make this again... but maybe with bacon...

Asparagus Parmesan

Reviewed: Jan. 28, 2004
I am NOT a fan of asparagus, but my husband is. I made this for him and we both loved it. He raved to his Mom. It was actually the first recipe that I've used that my Mother-In-Law asked for. I would recommend cooking the asparagus longer than recommended in the recipe, they came out a bit underdone the first time I tried it.

Texas Ranch Chicken

A good quick chicken recipe, although I'd prefer a bit more kick.
