Savory Sausage and Rice Skillet

My husband and I LOVE this. I scale this for 2 servings. I've made it many times but just adding a picture today. I make 2 servings of Texmati rice by itself using chicken broth with a few garlic granules and a small amount of salt and pepper. When done I put in a shallow bowl to cool. I used 2 Jenni-O Sweet Italian Turkey Sausages removed from casings and chopped it up while cooking with 1 T EVOO, seasoned with Lawry's Seasoned Salt & garlic powder, pepper & a dash of thyme. I removed meat as soon as no pink left. Sauteed veggies in juices from meat adding some chicken broth as needed. When soft added meat & rice and heated. YUMMMM-O!!!

Noodles Romanoff

i made this tonight along with Tender Pan-Fried Chicken Breasts also from this sight. I am one of those people that don't measure a lot but it still came out great. I added a little milk because it was a bit stiff (maybe because I added a lot of cheese). I took another reviewers suggestion so that this would be hot enough and after pouring the noodles into a colander, I put the butter in the pan still on the stove on low heat and then also added the rest of the ingredients along with a bit of milk and then added the noodles back in and stirred to combine and left on the stove on low (stirring occasionally) while the chicken breasts finished up. I will make both of these recipes again. Thanks Carolyn

Tender Pan-Fried Chicken Breasts

This was great. My hubby loved it!!! I did leave out a few of the spices because I didn't have them. I also put them on a rack before putting them in the oven as others had suggested. I paired this with Noodles Romanoff also from this site. Thanks Alesia

Creamy Chicken Pasta

I made this tonight, but I did tweak it a bit. I used Barilla Cellentani pasta, 1 1/2 cans cream of chicken soup. First I sauteed a small amt of choped onion and then added chopped garlic and then removed it to a bowl. I cut the chicken in small pieces and cooked in same skillet. I seasoned the chicken with Lawry's Seasoned Salt, garlic salt and pepper. After removing chicken I put soup, milk, a scoop of sour cream, a big scoop of cream cheese, peas, chicken bouillon & parsley. Then parmesan and mozzarella. Then I added back the chicken and onion mixture and pasta and seasoned more to taste. Very good. Thanks Melissa.

Chinese Chicken Fried Rice I

I made this tonight for dinner. Actually I prepped most of the stuff early in the day including cooking the rice. So the meal came together fairly quickly. I included all the ingredients except the pea pods. I used baby peas instead. And I used Rice Select Royal Blend with Red Quinoa....so glad I used this rice blend. And I didn't measure much of anything (as usual) and added some seasoning like Lawry's Seasoned Salt and some pepper. My hubby and I really loved this. And it made a lot even when I scaled it to serve two. Oh, yes, and I used EVOO instead of sesame oil...my preference in almost everything. Sal....you made us really happy! Thanks.

Italian Peas

These peas were wonderful! I sauteed the finely chopped onions in EVOO and a little butter, then added the garlic. Then turned off the burner until the rest of the dinner was ready (grilled hot dog and mashed sweet potatoes and salad). When the rest was almost ready I added the peas, some water and a little chicken bouillon and Lawry's season salt & a dash of pepper, and 1 finely chopped white mushroom. Heated that all through and our amazing dinner was ready. This recipe made my favorite veggie even better. Thanks WORSHIPWARRIORMT!!!

Angel Chicken Pasta

This was really Yummy! I took a suggestion from Erin's review (7/10/2012) and made this on the stove in a deep skillet. I sprinkled them with just enough Italian Seasoning Mix (from this site by Debby) and saute'd until no longer pink. I deglazed the pan with the white wine and added the golden mushroom soup and cream cheese and then thinned out the sauce with chicken broth. I made this just with enough chicken for 2 but made sauce enough for 4 people to cover the pasta. This was awesome and will definitely make many more times. Thanks Marian (and the others).

Orange Chicken Stir Fry

I made this mainly for the sauce since I used veggies I had on hand. I made the sauce as is, except omitted the orange zest and I added the flour to the mixture. I cooked the chunks of chicken first in the oil and then drained and set aside. Then I added my chopped veggies (diced onions, red and green bell pepper, carrots and celery) and when they were al dente, I added the garlic, cooked for a minute and added the juice mixture. It thickened nicely and then put the chicken back in. Reheated everything and poured over brown rice. We LOVED it. You could put any veggies in it you want and it would be awesome. Thanks Kelly.

Baked Garlic Parmesan Chicken

This recipe was soooo goood!! I love to cook and as I've gotten older I rarely measure but did follow the basics of this since I adjusted this for 2 servings. I heated basil infused oil and about the same amount of butter and finely diced garlic. When cool I added a good squeeze of lemon and dredged the chicken breasts in it and then in the breadcrumb mixture of Parmesan, pepper and some Lawry's Seasoned Salt. I baked it on a rack like someone else suggested at 425. It came out a little crunchy, and still very moist inside. It pared up very well with Easy Lemon and Garlic Broccoli also from this site. What a lovely dinner we had!!! Thanks Karen.

Apricot-Glazed Pork Chops

This was absolutely scrumptious. I did not have wine, so I used orange juice which goes nicely with apricot. The meat was so tender and tasty and the sauce was thick enough so it didn't run off the meat on the plate. I paired it with rice which I made with OJ as well instead of water and I thought....why not add some apricot jam to the rice while cooking it? aaahhh man! another winner. Easy recipe, too. Thanks a bunch.

Dishpan Cookies II

I made these cookies for Christmas 2011 and again Christmas 2012. Each time I cut the recipe in half. The last time had to make it again after I gave some away and we ate the rest. It seemed the longer we had them around, the better and crunchier they were. They are all gone now and I'm having withdrawals. they are awesome. I'm not waiting until another year to make them this time. Thanks a lot Laura and Tammy.

Cinnamon and Orange Glazed Carrots

I've made this recipe twice now and we really enjoy it. A nice twist on a simple vegetable. Left overs are even better the next day. They seem to soak up the flavors. I used a bag of mini carrots and this couldn't have been easier. Will make it many more times. And I always have those ingredients on hand. Thanks Katie.

Sarah's Rice Pilaf

I made this today but I didn't have any white rice so I used Trader Joe's Basmati rice medley. It worked really well. I also added chopped almonds. It could have used a little more seasoning. Was delicious with chicken tenders with sea salt and ground pepper.So easy and quick and only had to use one skillet.This is a keeper!

Deeelicious! We had this for dinner tonight. I changed the servings to 2 and used the calculator which really helped.I did use 2 oz of pasta for each of us though. I'll be making this again soon. Hubby loved it.

Chef John's Italian Meatballs

These meatballs were awesome! Like most other people, I did change a few things, but only because I didn't have the exact ingredients listed. I had 93/7% ground beef so I used 1 1/2 lbs of that and I was going to use 1/2 lb Jenni-O Sweet Italian Sausage with casings removed. But by accident I had bought Turkey Bratwurst. So I used 2 of them and mashed them thoroughly into the ground beef. I also used about 1tablespoon of dried parsley instead of fresh, only 1/4 teaspoon red pepper flakes. And when the onion was about finished cooking, I added the chopped garlic to bring out the flavor. For me, it made 28 meatballs and each was 2 Weight Watcher points plus. Since it's just my husband and myself, we have 2 more meals now in the freezer already in the sauce that I made and 16 more meatballs (without sauce) bagged in the freezer as well. Now we can have these delicious meatballs any time we want.
