Baked Garlic Parmesan Chicken
This recipe was soooo goood!! I love to cook and as I've gotten older I rarely measure but did follow the basics of this since I adjusted this for 2 servings. I heated basil infused oil and about the same amount of butter and finely diced garlic. When cool I added a good squeeze of lemon and dredged the chicken breasts in it and then in the breadcrumb mixture of Parmesan, pepper and some Lawry's Seasoned Salt. I baked it on a rack like someone else suggested at 425. It came out a little crunchy, and still very moist inside. It pared up very well with Easy Lemon and Garlic Broccoli also from this site. What a lovely dinner we had!!! Thanks Karen.

Apricot-Glazed Pork Chops
This was absolutely scrumptious. I did not have wine, so I used orange juice which goes nicely with apricot. The meat was so tender and tasty and the sauce was thick enough so it didn't run off the meat on the plate. I paired it with rice which I made with OJ as well instead of water and I thought....why not add some apricot jam to the rice while cooking it? aaahhh man! another winner. Easy recipe, too. Thanks a bunch.

Pork Chop Grill
We made this recipe tonight. I got it ready and hubby grilled it. Awesome! Very tender and moist to the last bite. It was like quality steak. It's a real keeper as are many other recipes on this site. Thanks goodeats!
