Spaghetti Squash I

Fantastic, healthy and simple. I prepared the squash as I normally do by baking it in the oven at 350 for 30 mins or so, halved in some water in a roasting dish.

Sauteed Carrots and Leeks

I had some leftover leeks in the fridge I had not a clue to do with and wasn't in the mood for soup so came across this little gem of a recipe. My leeks were kind of medium/small sized and I had 3 in the fridge so I just used them all. The only other thing I did differently was nix the sugar (diabetic husband, and I didn't feel it needed it). First of all, this smelled really good in the pan. My husband came in the kitchen and said it smelled awesome. It did take a bit longer than the 15 minutes stated for all my liquid to evaporate and everything to come together, but no biggie. It was time well spent. My picky kids didn't take to it much, but the husband and I literally devoured the rest of the pan with our dinner. Fantastic. This may be my new favorite way to make leeks.

Divine Meatloaf

This was a great meatloaf. I used buffalo instead of the usual ground beef. Every single member of the family loved it, which is rare in this house of 5! Yum!

Four-Bean Taco Chili

Marinated Baked Pork Chops

Great! I marinated the chops all day and threw them in the oven for dinner. They only took 30 mins to be done perfectly. Nice flavor.

White Chili I

I changed this a little bit to suit my tastes after throwing everything together as written... It was decent that way, don't get me wrong, but for me, it needed something more to be "chili". I added a can of great northern beans and a can of chickpeas. I also added more cumin than called for and more cayenne. I also added a few splashes of Franks Red Hot and a dash of liquid smoke. Lots and lots of black pepper as well... It wasn't thin at all (probably due to my adding all those extra beans, eh?) and my husband enjoyed it. Next time I think I'll use fresh cilantro instead of dried and maybe mince a fresh jalepeno or habanero for it as well. Good recipe - tweak as you will... Yummy with hot buttered corn bread for sure!

North Carolina-Style Pulled Pork

Now this is some good pulled pork... I made it in the crockpot and was not disappointed. My husband claimed it was a little hot, but he can be a wimp... haha. I thought it was great. Thanks!

Spicy Sausage Quiche

Fantastic. Only change I made was instead of the jalepeno pepper I used red and orange sweet peppers. It took around 28 mins to be totally cooked through. I had to peel myself away from it, it was so good... Will be making this again for sure.

Tasty Orange Chops

Used all ingredients as listed except for using plain ol' OJ out of the carton because I don't normally use the frozen stuff. I marinated my chops overnight in a ziploc bag. Tossed the marinade out after putting the pork chops on the George Foreman. They took just a couple of minutes on the grill and turned out AMAZING. Definitely didn't need the extra marinade for dipping sauce or anything at all. They were nice and flavorful just the way they were. Everyone happily ate them, even the picky middle child. :) I'll definitely make these again!

Warm Heart Stew

The only ingredient change I made to this recipe was using dried basil instead of fresh (I just didn't have any). I let this simmer on Low while I was at work all day. YUM. This was so so good. Filling and comforting on this particular snowy day. Can't wait to taste the leftovers. I can see this becoming a staple.

Banana Pancakes I

Hmmm. Not sure how to rate this recipe - if I could, I'd probably give it around 3.5 stars, but I'll give it a 4 on the side of caution. The taste was pretty good.. most certainly banana-y, but the texture wasn't great. They also burned very very quickly, and the outside was done well before the insides even with the heat on low. The only thing I changed was omitting the sugar, but I don't believe that would change things that much.... bananas - especially over ripe ones - are sugary enough. I'll give them a try again sometime, but this really wasn't the best pancake recipe I've ever made.

Peppers Roasted with Garlic, Basil and Tomatoes

I was a little skeptical of this going into it, but no more! When I took my basil out of the container, it was a little funky so I tossed it and instead had to use some dried.... I used Tarragon Vinegar. These peppers turned out just delicious! I do think that fresh basil would be much better, but the dried definitely didn't ruin things! I can't wait to make this again.

Barbie's Tuna Salad

This is the best tuna salad I have EVER had. My husband even asked me to put the recipe in a place he'd be able to get to easily so he can make it all the time when I'm gone for work. He usually just wings it when it comes to tuna salad, but he fell in love with this recipe.

German Currywurst

This one I didn't have to beg my kids to eat! haha After reading the reviews, I only used 1 can of tomato sauce and then added about 1/2 a can full of Heinz Ketchup. I added WAYYY more than a pinch of paprika and probably a good 2 tablespoons of curry. I let it all simmer on the stove around 20 mins and it was SO good. My kids gobbled it up and begged for more. I'll be making 2 lbs next time!

Very Easy Fruit Salad

This was certainly very easy... it was also very good. I can see how some would be put off by the pie filling mixed in, but I was looking for something different and sweet (but healthier than some other desserts) so this worked out great. If I wasn't in the mood for the sugary syrupy goodness I'd definitely not make this recipe. I added some blueberries and blackberries and it turned out delicious. The bananas browned up pretty quickly after it set in the fridge a while, so some lemon juice is probably a must next time - either that or omitting them altogether because they were my least favorite part anyway - but other than that, no issues. Good stuff!

Chicken with Asparagus and Roasted Red Peppers

Simply delicious. My chicken needed more than 1/2 cup of broth (more like 3/4 cup), but other than that I followed the recipe exactly. Wonderful meal. It didn't even really need the cheese, but it added a nice touch to it. Will definitely make this again.

Angel Hair Pasta Salad

Pretty good base idea, but it did need jazzed up a bit. I added some finely diced celery and a chopped green pepper. 1/2 teaspoon of dill really brought it together.
