Hmmm. Not sure how to rate this recipe - if I could, I'd probably give it around 3.5 stars, but I'll give it a 4 on the side of caution. The taste was pretty good.. most certainly banana-y, but the texture wasn't great. They also burned very very quickly, and the outside was done well before the insides even with the heat on low. The only thing I changed was omitting the sugar, but I don't believe that would change things that much.... bananas - especially over ripe ones - are sugary enough. I'll give them a try again sometime, but this really wasn't the best pancake recipe I've ever made.
