Easy Shake and Bake Chicken

Really, really good chicken. Was looking for a simple alternative to breaded chicken. I needed to make it gluten free, so I substituted Pamela's Gluten Free Baking Mix for the flour here and it worked perfectly. I didn't shake it but just dredged it in the flour in a large bowl. My husband said we'll never have to buy KFC again - and even my very picky 5-year-old, who usually refuses meat of any type, ate his entire serving. The only thing I'd add is that I think you could get away with slightly less butter. Ours turned out really dripping in butter. Perhaps I didn't use enough chicken, but next time I'll try with 2/3 the butter and go from there. Thanks for the terrific recipe!

Orange Raisin Muffins

Very easy recipe. For us they turned out a bit on the dry side, even though I added a bit of extra orange juice in case the raisins needed it. Tolerable, but not as moist as other recipes we use (the ones that use yogurt). I really liked that this recipe has so little sugar, but these also seemed overly salty to us. Next time I would reduce the salt and possibly increase the sugar slightly. Really like the combination of orange and raisins; just seems to need a bit of tweaking in our kitchen :) Oh, and the crust on top looked amazing - they are a really beautiful muffin :)

Pineapple Upside-Down Cake VII

Great simple recipe. Nice, but VERY sweet. The first time, I took the sugar down to a single cup, and parts of the side of the cake were still pure sugar. Second time I reduced to about 1/3 cup butter and 3/4 cup of sugar, and it's still plenty sweet. Looks nice in a 9x13 but better in the skillet - really nice to take to a potluck or event.

Laura's Quick Slow Cooker Turkey Chili

I had never made chili before. This was a super-easy recipe that turned out great. I did substitute one can of canned tomatoes for one of the cans of soup. My slow cooker also runs hot, so I reduced the time to 4 hours on low or two on hot, and it still turned out great. My husband and I, not great chili fans in the past, both loved it, and so does our 1-year-old daughter. Our extremely picky 3-year-old is taking more persuading but I think in the end he will also come to like it. We plan to introduce this into our regular 2-week rotation of meals. Thanks for providing the recipe!

Healthier Big Soft Ginger Cookies

I made this recipe gluten free by using a gluten free flour blend instead of the two flours listed here. It worked great and the flavor was really good. The cookies were a bit heavy, but that was probably the GF flour mix. Definitely will add this to our cookie roster.

Balsamic-Glazed Salmon Fillets

Glaze did not overpower the salmon. Very easy to prepare. I had trouble getting the salmon cooked through all the way - this could have been because of the uneven shape of the fillets. My husband said it reminded him of Hawaiian dressings... I think we prefer our usual, more plain lemon salmon, but this was good for a change.

Jacky's Fruit and Yogurt Muffins

Very nice muffin. Scaled to make 9 portions, this recipe makes 24 mini muffins (2x 12-mini-cake/muffin pans). I made this recipe gluten and dairy free by substituting Pamela's Baking Mix for the flour, Earth Balance Spread for the butter, and Silk soy blueberry yogurt for the yogurt. Came out great. To experiment, I did sprinkle a little cinnamon and sugar on top of half the batch, and that did add some flavor, but plain was delicious on its own. Baking time for the mini muffins was about 18-20 minutes. Thanks for the great recipe.

Unbelievable Chicken

Very easy, tasty chicken. I used chicken tenders, pre-cut, and marinaded for only 4 hours. It was still very flavorful and moist. This will become a regular on our grill!
