Chocolate Buttercream Frosting
This was a very nice & easy frosting...it pairs well with the Nairobi Chocolate cake & I'm sure will be a big hit at the scout bake sale. I made according to recipe, but for personal use, I would decrease the sugar by 1 cup...but that's pretty typical of us, I do the same on our cream cheese frosting for Italian Cream Cake, we just don't like our frosting so sweet!

Nairobi Chocolate Cake
These make the most beautiful cupcakes! fill 3/4 full & cook per directions & they are perfect. Also a lovely, tasty, moist chocolate cake...not sure why some think it isn't sweet enough, it's perfect as is, if you need sweeter, ice it! We used Martha Stewart's caramel buttercream to frost ours...yummy, but I'll try something different next time!

Chicken Pot Pie IX
This is a great recipe! My family loves this pie...especially on a homemade piecrust, which makes it tasty even when reheating. (we use Grammy's Piecrust recipe in my recipe box) The best we've had this, though, instead of boiling the chicken & veg, I used the leftovers from a roasted chicken we ate earlier that week & put it in...the combo of dark & light meat add a new level of flavor to this dish I highly recommend! The veggies (and we don't stick to just what is here, toss in whatever you have) I just put in the pie raw & they cooked up fine. I used 'better than bouillon' to make my own broth...but would've used broth from a boiled chicken if I had it available at the time. We will make this again & again! thank you!
