Rita's Spinach Casserole

Just made this and wow - it was amazing! SO easy, inexpensive, and combines all the things I love. The changes I made were because I had time to spare, but I would make this exact to the recipe if I wanted a quick meal! I used 1 lb ground chicken and 1 1/2 cups light sour cream and 2 cups light mozzarella cheese to cut down on fat. I also used a whole box of pasta (6 cups), a 32 oz jar of 'sausage and peppers' pasta sauce, and added 4 oz of fresh sliced button mushrooms (sauteed with the chicken). To the chicken I added 3 cloves fresh crushed sliced garlic, an italian blend seasoning that has marjoram, thyme, rosemary, sage, oregano and basil. I sauteed a big bag of fresh chopped spinach and then mixed everything together, putting the cheese on top.

Spinach Enchiladas

I love all of the ingredients included in this recipe, but I did not think it was very good. The flavor was just odd all-together. I think I didn't like the sauce I used - will try again with different sauce.

Jalapeno Poppers of Champions

This recipe was good. I used Anaheim peppers instead of jalapenos because sometimes jalapenos are too spicy for me. I added one cup of shredded monterrey jack cheese to the cream cheese. I also used real bacon. For some crunch I crushed up some homemade tortilla chips and coated the cream cheese side of the peppers before wrapping them in bacon. I pan-fried them before putting them in the oven to get em crispy and render off some of the fat. They were good, but I will probably tweak the recipe some more next time to add more flavor. Great starter recipe though!

Salmon Salad

This was ok. After making it, I thought it needed more yogurt so I about doubled it. Although I love salmon, I still think this recipe needed something sweet and acidic to cut through the fishiness (especially since it's canned salmon) and add more flavor. Next time I think I will add sliced grapes, diced onions and lemon juice. Decent base recipe though.

Spinach Stuffed Chicken Breast

Fantastic recipe! I made as directed, except I sauteed the spinach in 1/2 TBSP salted butter, and omitted the bacon (didn't have a good sale at the store and I don't particularly care for bacon in my entrees). The chicken was terrifically moist and the pepperjack gave it a nice kick. It's a great base recipe - I will definitely add my own tweaks next time I make it!

A Nice Slow-Cooked Pork

While some people criticized this recipe for being too watery, there is an easy fix for this: Make a gravy! Ladle the excess liquid into a saucepan. Thicken with cornstarch or flour until it reaches a creamy consistency. Add salt and pepper to taste. I even sliced up a few mushrooms from the crock and threw em in there. It is hands down the most delicious gravy I have ever tasted! You can pour desired amount onto the dish when it's done. It makes a huge batch so save it to pour over mashed potatoes another night.
