No Crust Pumpkin Pie

This is not a pie I will make again. Fairly easy to make but the taste is fairly bland. I found out quickly those aluminum pans you buy in the grocery store are not 10". Made exactly as the recipe stated however the amount it made filled 2 9" pans to the top plus I had to cook them longer to get the centers done. I'm not a pumpkin pie fan (then why make it? for family!) but I made one for Thanksgiving that I actually liked. Lost that recipe, though, so thought I'd try this one since the ingredients were similar. I used Bisquik, though, since I didn't have buttermilk baking mix. I even added more pumpkin pie spice. Smelled great when making and my house now has a beautiful Christmas aroma from cooking but I wouldn't recommend this without a lot of tweaking.

Juicy Roasted Chicken

Made this for Sunday dinner and it is great. Easy to make with simple ingredients. Only change we made was substitute garlic powder for the onion mainly because kids hate onion or even the hint of it but they love anything garlic and used butter instead of margarine. Other than that, did exactly what the recipe called for. Smelled wonderful cooking and it is the juiciest, most tender chicken I have ever had. Leftovers will make great sandwiches and salads. Will definitely make again.

Baked Chicken Nuggets

Made these tonight and they were really good and tasty. Even the picky eater kids liked them and the only nuggets they've ever had came from a fast food place. The only change I made was the bread crumbs. I used Progresso's unseasoned just because, with the thyme and basil, I didn't think the kids would like the extra seasoning and they came out perfectly seasoned. These would make an awesome appetizer when watching NASCAR. Will definitely make again. It's on my favorites list.

Easy Lasagna II

Just finished this for supper and everyone loved it. Even the picky eater kids. It was fairly easy to make but a little labor intensive with the meat sauce and cheese filler being made simultaneously. The best part is the different flavors that come through. Of course you have the cheeses but then there is the flavored meat sauce and the noodles which cooked perfectly. I followed it to the letter and it is one of the best lasagnas we have ever had. Will definitely make it again, that is as soon as the leftovers are gone. I highly recommend this.

Country Scalloped Potatoes

Made these last night and they were fabulous. Followed directions exactly and they turned out beautifully. Only had to make 1 change and I don't know how it affected the flavor. Couldn't find any chicken gravy, Campbell or otherwise, and had (?) to use cream of chicken soup. Like I said, I don't know how this affected the flavor but they were good to me. Reminded me of the ones my mom used to make when I was a kid. I think, though, because I had to use the chicken soup, I should have added more milk, maybe 1/2 cup. Definitely worth the trouble of peeling potatoes and the other preparations. Being a widower and living alone, I have to figure out how to half this recipe so I won't have so many leftovers.

Marinated Baked Pork Chops

Although this recipe calls for 6 chops, I used it on only 1. My chop was thick, though, about an inch but, following the cooking instructions, it came out perfect. Very tender and flavorful. I did marinate it before hand. Only complaint I have is the amount of sauce. Like I said, I only had one thick chop and used every bit of the sauce which was just enough. If I had more chops i would at least triple the recipe but, other than that, it was a perfect sauce.

Grilled Cornish Game Hens

Fixed this yesterday using whole hens and, I must say, the sauce makes this dish. The flavor was wonderful and not overpowering. The skin was nice and crisp and had great flavor and the meat was mouth watering. Only change I made was eliminating the white wine simply because we don't drink and I didn't feel like going to the store for some. I don't think it would have made any difference though. I suspect this marinade would be good on almost any meat. I must confess, though, this was an experimental recipe for me since I was using my rotisserie for the first time and wanted something fairly simple. I do plan to use it again and I will let you know how it is with other meats. Again, great recipe. Thanks

Red Skinned Potato Salad

Made this today for our July 4th dinner. It was a hit. Fairly easy to make and put together. I think next time I make it I will cut back on the mayo. A little too creamy for me but, still, the taste was fantastic. Reminded me of salads my mom made when I was a kid.
