Quinoa and Black Beans

This is an easy recipe! Tasty, filling, and wholesome. I made the following changes: Chicken broth instead of vegetable, 1 can black beans instead of 2, and omitted cayenne pepper because I can't handle spice very well. Be sure to rinse the quinoa to avoid bitterness. The rest is just chop, add to pot, boil, simmer, and serve!

Soft Oatmeal Cookies

My coworker made these and brought them in today. They are delicious! Not too sweet, not moist and yet not dry, not as soft as I expected (I don't like them too soft anyway), not buttery. Overall a great tasting, guilt-free oatmeal cookie!

Grandma's Corn Chowder

Great base recipe for corn chowder. I added 3/4 teaspoon of ground cumin and 1 teaspoon of dried thyme for extra flavor. I like having more bite in my corn chowder, so I used one less can of cream-style corn and added one can of corn kernels. An excellent dinner or appetizer soup!

Bean Soup With Kale

Don't know what to do with kale? This is it! This delicious, warms-the-soul soup goes very well with cornbread. I feel healthy after eating it! I like the variety of vegetables, which you can substitute for other vegetables you have on hand. (I used a large garden-variety tomato and red onion instead of yellow.)

Cranberry Pistachio Biscotti

I didn't quite get the hard biscotti texture. It rose slightly and tasted a bit like a cookie. The problem might be the density of the olive oil used. I'll try a lighter olive oil next time.
