Portobello Mushroom Stroganoff

Creamy, filling, and DELICIOUS!!! I substituted cremini (baby portabellos) mushrooms for the portabellos after reading other reviews about a funny color. Turned out fine with the cremini mushrooms. I also added about 1 cup of vegetarian ground beef and substituted half the sour cream with a condensed mushroom soup for flavor.

Curried Coconut Chicken

Overall, a rich, filling, delicious recipe - BUT ADD VEGGIES!!! I made this VEGETARIAN by substituting tofu for the chicken. I took the suggestion of other reviews and omitted the tomato sauce, but used a TBL of tomato taste to add some richness. I also don't like savory dishes being too sweet so I omitted the sugar and found that the coconut milk adds enough sweetnes.

Apricot Lentil Soup

INCREDIBLE!!! This is a great VEGAN recipe if you replace the chicken stock with veggie stock. I also used about 8 - 10 fresh apricots since they're in season. I took the advice of other reviews and used more cumin AND 1/2tsp of curry powder. My very picky vegetarian boyfriend, who never eats leftovers, had this three meals in a row. Contrary to some reviews, I think that this would be a great dish for entertaining (vibrant color), especially if you want to impress vegetarian/vegan friends.

Veggie Pot Pie

This is the perfect recipe for a hardy vegetarian main course when you don't feel like tofu again. My boyfriend is a strict vegetarian but is still a meat and tatoes kind a guy so this was great for his big appetite. Also, for a beginning cook like me, it took a lot of prep time but was totally worth it. I also found that using some extra cornstarch was helpful.

Crust for Veggie Pot Pie
