Tofu Peanut Stir-Fry

My wife and I really enjoyed this recipe. It is a very tasty dish without a lot of work. It's not easy to find vegetarian dishes this tasty that don't involve a lot of prep time or a lot of ingredients. I didn't know the tofu pieces would expand as much as they did when they cooked, so I would advise that you cut the tofu into pieces that are quite small.

Eggplant Parmesan II

Amazing! I went to a party with several vegetarians and everyone was complimenting me on the eggplant. If you slice the eggplant widthwise (into little patties) they are also very good beef patty replacements for a vegetarian alternative to regular burgers.

It's Chili by George!!

This recipe is fantastic. My girlfriend doesn't like mushrooms, so I omitted them, and I'm not a fan of pinto beans, so I doubled the kidney beans instead. I also added a couple splashes of tabasco sauce, but I don't think it made a difference. It's just the two of us, so we had leftovers for two days, and we never got tired of eating it!

Nana's Mashed Turnip

This was very easy to make, and I nice change from having plain mashed potatoes as a side. My girlfriend and I really enjoyed it. We also made it adding some shredded old-nippy cheddar cheese on top for the last step, which gave it a nice touch as well.

Garlicky Baked Butternut Squash

I usually make candied squash, but I'm trying to cut down on my sugar intake so this recipe worked perfectly for me. It was very fast as easy (as far as squash is concerned). I found that with the salt and the parmesan it was a bit too salty for me. Next time I try it I'll leave out the salt.
