About this Cook
My mother is Italian and my father is Trinidadian, so I grew up with good food from a variety of different ethnicities. As a photographer by trade, I enjoy all things artistic...which is why I enjoy cooking so much.
My favorite things to cook
I'm not afraid to try anything. Because of my busy schedule, quick-and-easy cooking has involuntarily become my most common cooking method, but when I have the time, I enjoy a challenge.
My favorite family cooking traditions
My Nonna (grandmother) is an excellent cook of all things Italian. Because I grew up so close to the Italian side of my family, most of what I ate growing up was Italian food. Although I enjoy it very much, for me its more enjoyable as an occasional night out to a restaurant, or a family gathering. My grandmother on my father's side is also an excellent cook, but because she lives in Trinidad I don't talk to her often enough to get her recipes.
My cooking triumphs
Since I started cooking when I was 8 years old, i've been working on a tomato based recipe that works well with all kinds of meat, but best with chicken thighs. I'm very close to perfecting it, and when I do, it will be put on this site for all to enjoy.
My cooking tragedies
When I was in college I tried to cook deep-fried chicken. Because it was one of the first times using that stove, I was not aware that it heated up much hotter than the one I was used to at my father's house. When I put the chicken in, it went from raw to completely black in about seven seconds, and stank up the whole house the way poorly cooked deep-fried food does. A funny story looking back. Live and learn.

Eggplant Parmesan II
Amazing! I went to a party with several vegetarians and everyone was complimenting me on the eggplant. If you slice the eggplant widthwise (into little patties) they are also very good beef patty replacements for a vegetarian alternative to regular burgers.

Tofu Peanut Stir-Fry
My wife and I really enjoyed this recipe. It is a very tasty dish without a lot of work. It's not easy to find vegetarian dishes this tasty that don't involve a lot of prep time or a lot of ingredients. I didn't know the tofu pieces would expand as much as they did when they cooked, so I would advise that you cut the tofu into pieces that are quite small.

Nana's Mashed Turnip
This was very easy to make, and I nice change from having plain mashed potatoes as a side. My girlfriend and I really enjoyed it. We also made it adding some shredded old-nippy cheddar cheese on top for the last step, which gave it a nice touch as well.
