Good Old Fashioned Pancakes

I loved this recipe! Simple wholesome ingredients (no skimping on the fat) and exactly what I was looking for. I followed the recipe exactly except for the salt. I only added 1/4 tsp. the recipe made enough for 2 with a hearty appetite. I had a 3 stack and my husband had a 4 stack of average restaurant sized pancakes. This will be my new standby. No need for any other. I served it with a little bit of pure organic maple syrup and freshly made raspberry compote made with fresh rasberries. It was an indulgent Sunday brunch for two.

Lemon Cranberry Whole Wheat Muffins

I do like this recipe because it is easy. When followed exactly, I didn't think it was sweet enough for me. I also didn't like the texture of the cranberries so much. I tried it again replacing the fresh cranberries with a can of "Woodstock Organic Whole Cranberry Sauce" and reduced the sugar to 1/2 cup. I made my own applesauce unsweetened from pink lady apples and added 1/2 tsp of cinnamon to the 1/2 cup of applesauce. Much better for the sweet-tooth I am. I will make it again like this.

Butternut Mascarpone Gnocchi

Amazing recipe...I absolutely love this! It was a fantastic side to spinach and onions that I usually serve over rice. This time, instead of rice, I opted for the gnocchi as an alternative. This tasted more like a potato pancake than gnocchi, though. There is only two of us, so this recipe made a lot more than we needed for one meal. We saved the left over mix in the refrigerator and cooked it like pancakes the next morning. I did not cook it in water first like the recipe. Instead I heated up a pan with a bit of sunflower oil, then poured the batter on like pancakes. Serve with butter and syrup or sour cream if you prefer a more savory flavor. Delicious!

Creamy Celery Root Mash

I love this recipe! I recieved 3 large celeriac from my CSA and had no idea what to do with them. This was a fantastic alternative to mashed potatoes. It tasted almost exactly like mashed potatoes with a slightly more fresh flavor. The dill weed complements the natural flavor of the celeriac very well. After reading the other review for this recipe, next time I will add chives and a pat of butter upon serving.
