Chicken and Broccoli Braid

Roast Sticky Chicken-Rotisserie Style

Followed this recipe as written (minus the white pepper because I didn't have any). I did take the hint of one review and used 2 generous pats of butter that were coated in the spices and then placed UNDER the skin on the chicken breasts. One stick of celery and two cloves of minced garlic were added with the onion. I wrapped it well, let it set over night in the fridge. I used one (7 lb) chicken, and it only took 4 hours to cook. My gosh!! BEST ROAST CHICKEN EVER! A TOTAL KEEPER! The chicken was so moist and tender and the house smelled wonderful. Thank you so much for this recipe!

Cherry Tomato Corn Salad

Outstanding summer salad! I used a 16 oz bag of (thawed) frozen corn (didn't have any fresh on hand). Took the advice of others and doubled the dressing, and used EQUAL amounts of the olive oil and lime juice (approx 1/4 c of each), and lots of minced fresh basil from my garden. It was wonderful! Definitely a keeper!!!!!

Leftover Chicken Croquettes

As others have said, a great basic recipe! I doctored it a bit, in part because I didn't have seasoned bread crumbs, and also because of previous reviews mentioning these were a bit bland. Nothing big--threw a generous amount of Italian seasoning in with the bread crumbs, and sauteed some garlic & celery along with the chopped onion. Definitely needed 3 eggs and I used a bit of milk along with. Made the patties a bit thin (per review that said they didn't cook all the way thru)--so I ended up with approx 10 patties total. This turned out well! My husband loved it, asked me to be sure to keep this recipe! He ate 4 patties for dinner and took leftovers with him for lunch today!! Thank you, Jeanne, for a def "keeper"!

Garden Veggie Pizza Squares

I doubled the recipe, used an entire package of the dressing mix, along with approx 1/2 c of mayo added to the cream cheese. After spreading the cream cheese mixture on the "crust", i sprinkled on some fresh dill, and then put on the veggies. Topped all with some finely grated cheddar cheese. It was awesome!! A very easy "main" dish for summer eating!!

Shrimp Scampi Bake

OH! MY! WORD!--this is DELICIOUS! I stuck with the original amounts of everything, and simply added 3/4 a cup of some white wine. (I used the extra sauce over some angel hair pasta.) Lowered the oven temp to 425 (so I could throw the garlic bread to cook along with); everything was done in 10 minutes. AWESOME, AWESOME meal. Many thanks to you, Kimber, for a truly wonderful meal.

Hearty Ham Casserole

After reading the reviews, I took great liberties with this recipe. I did not boil the potatoes, just cubed them into small pieces, threw in some garlic, black pepper,and some cayenne pepper and browned with the onion and some sliced celery. Then added 1/3 c flour, 2 cups of milk, thickened it up, threw in some cheddar cheese, the ham, corn, and some leftover peas I had. Put that in a 9 x 13 pan, and baked it at 350 for 40 minutes. Put some more cheese on top to melt, and sprinkled the top with some hot Hungarian paprika. The result? A very filling, slightly kicky, easy dinner! The original recipe is a great starting point!

Cream Cheese Ranch Potatoes

I made these for our Christmas dinner, to go with ham. They were excellent! I didn't use sour cream, only some milk (didn't have any sour cream)--they were still AWESOME! Definitely one to put on the "keeper" list! Thank you Jamiesgirl, for sharing!

Broccoli Cheese Soup V

This soup is quick, easy and totally FANTASTIC! Served it with some boule bread for dunking. While the recipes says it serves 6, it made a LOT of soup. It tastes just like the soup that well-known "bread place" makes! Cannot say enough about how wonderful this soup is. I did as others and used only 1 lb of Velveeta and threw in 1/2 pound of sharp cheddar, along with just a PINCH of cayenne and a quick dash of garlic powder. Wonderful, wonderful soup for a cold winter day! Will DEFINITELY be making this again!

Make Ahead Lunch Wraps

I halved this recipe, used some fresh cilatro, and increased the cheese (about 1/2 more than called for)--THESE ARE GREAT! I had no problem with reheating the frozen ones...basically, let them sit in the fridge for a bit and then reheat them in the microwave covered with a damp papertowel. They didn't toughen up, nor did they taste like they'd been frozen. Serve with some salsa on the side....Totally wonderful. Thanks for the recipes!

Baked Onion Dip I

This was a HUGE disappointment. Because of the obvious fat content, I used low-fat mayo and low-fat swiss. I still ended up using a good 12-14 paper towels to soak up part of the grease it produces. (Not all, just part!) After all that effort, the flavor is NOT that great. It was a terrible disappointment, and I certainly will not make it again! Sorry.
