About Me
I picked up cooking mostly from my father when I was a kid. I am most at peace when I am in the kitchen creating something from nothing. Mostly, I love to cook American foods. Recently, my entire family switched to a primal/paleo diet/lifestyle. This change has opened a whole new world of food challenges and adventures. The focus of my cooking is now based on the primal/paleo way of life. All of my recipes follow the guidelines of Mark Sisson's "Primal Blueprint" diet.
My favorite things to cook
I love to cook just about anything, but meats and poultry are my absolute favorites. I believe that you build flavor in layers and meats and poultry provide many opportunities for that. With eliminating sugars and dangerous oils from my diet, building intense flavor profiles in food becomes tricky. But, being in the kitchen for over 20 years has enabled me to prepare meals that are just as delicious and one that strictly follow the paleo/primal way of life.
My favorite family cooking traditions
My favorite family cooking traditions are preparing holiday meals for my entire family. Thanksgiving Day is game time for me. i am as focused on that day as you will ever see me. No jokes, no play. It's very intense! My sous chefs (my wife and girls) pretty much walk on egg shells when they are assisting me. Yeah, I need counseling, I know.
My cooking triumphs
No particular triumphs to report here. But, a food triumph to me is when a dish is executed perfectly - in flavor and presentation.
My cooking tragedies
Don't believe in cooking tragedies. Any botched recipe is a victory in a sense because it has put you one step closer to perfection.
