White Bean Chicken Chili

This take on chili is a nice break from the usual beef-and-beans mix. The tomatoes and tomatillos give it a good flavor that mixes nicely with the beans and corn, and you can toss all the ingredients in the crockpot if you don't want to make it on the stove after work. It goes very nicely with a warm loaf of homemade bread, too.

Brooke's Best Bombshell Brownies

Very tasty. These brownies are sweet without being overwhelming and just moist enough enough to be fudgey without falling apart completely as you eat them. Since it's just me and my wife, I made half the recipe in a 9x9 pan, and they turned out great. I personally like swapping half the semisweet chocolate chips for white chocolate chips; it looks nice and tastes even better.

Quick and Easy Oatmeal Muffins

Great, simple recipe for oatmeal muffins that aren't too sweet to eat for breakfast. The simplicity makes it very easy to add nuts, dried fruit, or spices to make a variety of different breakfast treats. I personally like them with half a cup of dried cranberries or a teaspoon of cinnamon and half a teaspoon of nutmeg.

Black Bean and Corn Quesadillas

These were excellent quesadillas. They're tasty, filling and, most importantly, very quick and easy to make on a night where you don't much time to plan or make dinner. I took another commenter's suggestion and baked my quesadillas instead of frying them in a pan, and it worked pretty well.

Broiled Tilapia Parmesan

This recipe is amazing. It's delicious and quick. As a reference, I usually make half the recipe and have the right amount of cheese mix for approximately 4 medium-sized fillets.

Best Chocolate Chip Cookies

Excellent, tasty cookies. A word of warning: bake by done-ness, not by time. I bake cookies on a baking stone and regularly have to leave these in for 13-15 minutes to get them completely cooked. Bake until the edges are nicely browned, otherwise you'll end up with a very soft, barely baked cookie that bends in half and breaks if you even try to pick it up. Personally, I like leaving the walnuts out (I'm not a big fan of nuts in cookies), and I switch half the chocolate chips for white chocolate chips.

Chocolate Cupcakes

These cupcakes are pretty good. They're nice a chocolately without being overwhelming. My biggest objection to the recipe is that it makes 2 dozen cupcakes, not the 16 it advertizes. As other reviewers have said, you should only fill the cups 1/2 to 2/3 full if you don't want your cupcakes to overflow the cups and look terrible.

Garlic Chicken with Orzo Noodles

This recipe is pretty good. It's simple to make and tastes fine. My main objection is that it isn't particularly flavorful. It needs a little more than just garlic for flavoring to really make it good; the recipe is a little bland as-is. Next time, I'm going to try marinading the chicken in Italian dressing and tossing a bullion cube in with the orzo.

Mandi's Cheesy Potato Soup

This recipe is pretty good as-is, but it's not great. To make this recipe excellent, you have to add bacon. Crumbling in a few strips before adding the cheese brings out the flavors of the recipe and adds a smokey flavor that really accents the cheese.

Quick and Easy Greek Spaghetti

This did not turn out when I made it. The boiling vinegar turned my fresh spinach into a disgusting paste and overpowered the other flavors in the dish. I ended up with a nausea-inducing, vinegar-flavored mush to put over my spaghetti noodles, and I had to order pizza for supper. Maybe some of the substitutions suggested in the comments would help make this dish better, but I never plan on making it again after how the basic recipe turned out.
