Dee's Health Bread

This is an excellent heavy, grain bread! The recipe was easy to follow with well-known ingredients. For anyone looking for a healthy bread recipe, I recommend this one! Also, I varied mine after I got to know the recipe. You can replace any of the following ingredients (flax seeds, cracked wheat, and sunflower seeds) with equivalent amounts of, old-fashioned oatmeal, sesame seeds, or even cracked bulgur cereal. For a nice, fancy touch coat your cookie sheets with yellow cornmeal (makes a nice bottom crust on the loaves)!!

Chicken Tortilla Soup I

This was very good. I served it in a crockpot at a potluck lunch; they every bit and asked for the recipe. As suggested by others I used cumin instead of oregano, added a spoonful of lemon juice (since I was out of lime) and offered sour cream and fresh cilantro along with the other proposed toppings. I think it really helped to make it the day before and warm it for a few hours in the crockpot before serving.

White Bean 'n' Ham Soup

Be sure to read the comments. This soup was very good, in part because I added things as others suggested: omitted the salt, added garlic, a dash of rooster sauce, a dash of worcestershire, and maybe 1/3 cup of tawny port (I wanted sherry, but was out). The soup was great, silky and not too salty. Maybe next time I'll use a bit of smoke flavoring as well. Definitely will make this again. Great use of leftover ham.

I have never bothered to rate a recipe before, but this was so good I couldn't resist. I didn't have brown sugar, so I substituted a random amount of honey. This was spectacular.

Cranberry and Cilantro Quinoa Salad

I got many compliments on this and requests for the recipe. Reading the reviews is always helpful. I rinsed the quinoa as suggested first, cooked it with chicken boullion, and left plenty of time for it to cool. Wish I would also have toasted the almonds ahead of time, so they had a chance to cool. I also used about 1/4 of the onion. It was plenty flavorful. Next time I think I will cut back on the curry a bit as well. Great way to sneak in some healthful fruits and vegetables.

Spaetzle, Sauerkraut and Sausage Casserole

This was just weird. Way too much effort for a pretty unimpressive dish, and an off-putting combination of flavors, to be honest. Considering how many pans I had to dirty, and that kielbasa is so tasty all on its own, this is definitely not something I will make again.
