Irish Soda Bread

Fantastic bread! My kids LOVED it toasted for breakfast and I love how well this recipe lends itself to versatility. I omitted the raisins and caraway (one of the kiddos doesn't like them) and added 1/2 tbsp each of cinnamon and vanilla extract. I also substituted plain yogurt for the sour cream as I didn't have any. Halved the recipe and baked in a metal 9x5 loaf pan for about 50 min. The center was a little gummy so next time I might bake it a little longer. I followed another reviewer's advice and let the dough sit for about 15 min to let the baking soda/powder "work" but then later read why that was a bad idea. I think this may be why the center of my loaf was gummy. I also threw some ice cubes onto the oven floor while it was baking for a nice, crispy crust. I think I will try making a savory loaf next...bye-bye store bought bread! P.S.- Another great tip is to buy powdered buttermilk (very inexpensive), add it to the dry ingredients and then add the appropriate amount of water to the liquid. You will always have buttermilk on hand!

Bow Ties with Sausage, Tomatoes and Cream

This recipe gets 3 stars as is because, as other reviewers mention, the sauce is a little bland. However, with the addition of spices to taste like, a dry Italian herb mix, onion powder, garlic powder, salt, and pepper this dish is an easy 5 stars. Could also be great baked in a casserole dish with a crunchy panko/parmesan cheese topping.

French Bread

I made this bread today and it turned out pretty good. I am not an experienced bread maker (this was only my second attempt at making any type of bread) and I did not have any trouble following the recipe. I did have to change a few things though since I don't own a bread machine and didn't have anything but whole wheat flour. This is where other reviewers' suggestions came in really handy. I proofed the yeast seperately and just added it to my flour mixture. Since I was using whole wheat flour, I decided to add 3 tsp of vital wheat gluten (to the dry flour mix) to ensure some elasticity to the dough. I used my hand mixer with the dough hook "beaters" to mix up the dough and I did have to add an extra 1/4 cup of water to it. I pre-heated my oven on the lowest temp setting, turned it off and then let the dough rise in it covered w/a damp kitchen towel. I also cut slits in the top before the 2nd rise instead of after it. I baked it @ 375 for 45 min (just made one large loaf). I also put an 8x8 pan of ice cubes on the rack below the bread. The texture of the finished bread was perfect. Crispy crust, tender, chewy inside. The flavor however, was not so great. Bland, and kind of fermented tasting. Not sure if this is because I used whole wheat flour or perhaps the addition of the vital wheat gluten gave it the strange taste. At any rate, I will be giving this recipe another try using different flour and adding some more salt or maybe rosemary and olive oil.

Man Dip

This was OK - not bad, just not great. It was kind of bland. I used reduced fat cream cheese, Hormel chili w/no beans (one spicy and one mild) and sharp cheddar. Took it to a large gathering (with plenty of men present), served with Fritos corn chips, and hardly anyone ate it. If I do decide to make this again for some reason, I will definitely add taco seasoning and jalapenos or something to give it some flavor.

Quick Chili II

This really is easy, tasty chili!!! My whole family loved it. I used kidney beans instead of ranch-style as well. I also added a 15oz can of diced tomatoes and, per another reviewer's advice, a tablespoon of unsweetened cocoa powder and a teaspoon of cinnamon. With the additions, this is a fantastic five-star recipe.

Slow Cooker Buffalo Chicken Sandwiches

Wow, this was good. Super easy to boot! I followed the recipe exactly except for using the entire envelope of ranch as opposed to half. I also didn't use "wing" sauce per se...I used a Louisiana red pepper sauce (Tate's) and only used about 1/2 the bottle total because I didn't want to burn the kids' tongues off. At any rate it was FANTASTIC. We had on wheat hoagie rolls w/blue cheese crumbles (ranch for the kids) and letttuce and tomato - sweet potato fries and fresh strawberries on the side. My husband and 3 boys think I am a genius...thanks Divinesoalce21!!!!!!

YUM! Just make sure you use a container that will fit your grahams evenly and is deep enough for 3 layers...mine overflowed a little but it was still DELISH!

Pumpkin Flax Quickbread

This is a fantastic recipe!! I followed the recipe exactly. Except for adding 1/4 cup of pecans. Next time I think I will leave out the applesauce though...it seemed to give it a little bit of a chewy texture and doesn't really add to the flavor. Will definitely be making again and again!

Yummy Sweet Potato Casserole

This was pretty good! The only things I did differently were baking the sweet potatoes and NOT adding the white sugar to the sweet potato mixture as we like ours tasting more like vegetables and less like candy. Thanks Tina!

Easy Cheap and Yummy Casserole

This was just OK. I fed this to 5 kids and not a single one finished a serving. I used Jennie-O turkey dogs and store brand baked beans. Maybe all beef hotdogs would make it taste better but still wouldn't be worth the calories (not to mention the fat). Darn...I really wanted to like this one :(

Award Winning Soft Chocolate Chip Cookies

I can't make up my mind about these cookies. Although they were VERY soft and moist and had great texture, I think the pudding keeps away that classic chocolate chip cookie flavor. Something was definitely missing so I will have to keep playing with the recipe until we get it the way we like it. I am adding an extra star becuase there were definitely NO leftovers!! UPDATE: This recipe is PERFECTION if you sub half the white flour with whole wheat flour and use one bag of dark or semi-sweet chocolate chips and one bag of milk chocolate chips. People beg me to bring these cookies!

Sloppy Joe Spaghetti

I did not care for this recipe. Maybe it was the sauce we used but I just don't think so. What is the point of the bread crumbs exactly? It just gave the sauce the texture of soggy bread. And why add the onion/green pepper mixture at the last minute? They were crunchy! I'm sorry to say this dish was just a disappointing waste of ingredients.

Six Can Chicken Tortilla Soup

This is a great recipe, however, add-ins are a must! Can't get any better than this for a weeknight dinner -cheap fast and easy! I also subbed cream of chicken soup for one of the cans of broth as well as a jar of fire-roasted salsa instead of the canned tomatoes. I used canned chicken because I had some on hand that needed to be used, but will definitely be using fresh next time. I added about a c. frozen diced onion, 1/4 c. finely chopped cilantro, 1.5 T. lime juice, 2 oz can diced green chiles, 3 cloves finely chopped garlic, and seasoned to taste with chili powder and cumin. Turned out great...my picky hubby said he would have eaten 5 bowls if he could've :) Thanks Terryn!

Healthy Banana Cookies

We were really disappointed with these. I only had 2 bananas so I added some peeled, diced apple and used applesauce instead of the oil. Once we added the rest of the ingredients, the mixture would not stick together so I added 1/2 cup of natural peanut butter and baked as directed. My husband took one bite and did not care for them. They had absolutely no flavor. I can't even see how they would be good even if I had not added the peanut butter. Seems like a great idea for a healthy cookie...maybe I will try again and play around with the ingredients. Thanks anyway "K.Gailbrath"!

White Chocolate Chip Oatmeal Cookies

Wow. These cookies were awesome! My family couldn't get enough. I followed the recipe exactly with the exception of nixing the chocolate and nuts and adding a cup and a half of raisins and a tsp of cinnamon. Thanks Julie!!
