Roasted Beets 'n' Sweets
I love this so much, I make it once a week! I always use yams, sweet potatoes, red and golden beets, and just 1/4 of a red onion. I've even added baby carrots when I was short of veggies; I put them in with the beets. The first time I made it as written and it was way too peppery for me, so now I just use 1/4 tsp. ground black pepper. Try it, it's awesome!

Raisin and Spice Brown Rice
This was fantastic! I accidentally left out the bay leaf but it turned out excellent anyway. The raisins were a very nice touch, they made this dish so much more sophisticated :) I also mixed in 1/2 cup finely chopped walnuts just before serving, for extra crunch. One suggestion: if you use water and a bouillon cube instead of the suggested chicken broth, don't add the whole cube unless you like your rice very salty.

Chickpea Curry
This is just excellent, my family and I love it. I do leave out the cayenne pepper, as I’m not a big fan of spicy food. One piece of advice: In the unlikely event that you have leftovers, remove the cinnamon sticks before refrigerating, as they will completely overpower every other flavor by the next day.
