Vidalia Muffins

These are now a staple for my family, pot lucks, and hostess gifts - I made some this morning for a dear friend in the country. Didn't have any cheese, made 'em anyway. They were still fantastic! So happy to have this recipe. I bet I could use a different cheese for a whole different taste! Maybe I'll let you know how it turns out! Thank you thank you!!

One Bowl Chocolate Cake II

Super easy to make and absolutely delicious! Moist, not over-sweet, and excellent flavor. My son and I couldn't help slicing "just one more" narrow layer off the top before frosting it, now we have a short cake! I will make this one again and again with a variety of toppings. Thank you so much for the recipe!

Whipped Cream Filling

Excellent and easy! Just be sure your gelatin mixture is room temperature and not too thick before adding it to prevent clumpiness. It was really easy to work with and just sweet enough to complement sweet desserts. Thank you, thank you, Cathy!

Aunt Mary's Eggplant Balls

These were great, although I don't think they can replace balls from chicken, pork, or beef. Kids liked them, too, but they like eggplant already. I have been really cutting down on meat, so these are great. I can't wait to try them on a pita with some Greek yogurt. Thank you, thank you!

Blueberry Coffee Cake

I just made these as muffins for work - they are fantastic! Really easy to make - which is great, since I know my staff will love them! My slight variation: Muffins are better for my crowd, so I filled muffin cups (with liners) 2/3 or so with batter, piled up about 8-12 blueberries on top, then I pushed them in a little and topped with the crumb topping. I did the same with diced bananas and more nuts instead of blueberries for 1/2 of the muffins. I cut down on cooking time by 5 min for the smaller pan(s). I will get Smucker's and do it exactly as directed, I am sure it'll be even better! Thank you thank you!

Carrot Cake Cookies

I found this recipe 1/2 hour ago and am now enjoying these fantastic little carrot cakes! WOW! I will use this recipes again and again! It is easy, easy! I didn't have raisins - I used dried cherries. And I substituted 1/2 cup of the flour for wheat flour, but otherwise to the T! Thank you so much for this recipe! My friends and family will definitely benefit!

Absolutely Excellent Oatmeal Cookies

Terrific. Defnitely cake-like. Probably more pleasing and palatable for those who aren't oatmeal cookie-lovers. I like a higher percentage of oatmeal, myself, but these are for a crowd, so these are perfect. Thanks!

Low-Fat Banana Bread

I must add my voice to those mayo skeptics, rather the voice of my daughter, an actual mayo lover (fries won't do without it). I told her to reserve judgment until she tried it, and she has decided that it is the best banana bread I've ever made - and she finally admits that it's cake instead of bread - although with the substitution of wheat flour, it has even more nutrition (to balance out the chocolate chips..). Thanks for this simple, easy-to-remember, delicious recipe!

Chocolate Chip Cookies I

Fabulous, and easy!! I had to cook a bit longer than 8 minutes, but they were soft and delicious. I tripled the recipe and used 1 cup softened butter & 1/2 cup shortening, too, and always use about 1/2 of the sugar called for kids never miss it with the sweet chips. For my own, I added dried cherries and walnuts for nutritional value - might as well!
