Eggnog Quick Bread

This came out very moist and flavorful. Made exactly as recipe calls for except I accidentally added about 2 T more of butter. For the next time I will probably cut back or eliminate the nutmeg since i'm not a big fan of the flavor. Next time I'll prob increase the rum. I used the real stuff not extract. Very good recipe! EASY

Cream of Wheat Griddlecakes

These are the best pancakes I have ever had or made. I use regular cream of wheat instead of instant. Since I enjoy the texture and flavor, I increased the cream of wheat to 1/2 C. I have used nonfat yogurt and nonfat sour cream and have noticed that the pancakes come out a bit dry. I also bake bacon until crispy, crumble it and mix with the dry ingredients. It is very important not to over mix. Mix only 12-15 times. Leave small lumps of flour. (they will cook out). Top with warm maple syrup. MMMM good!

Honey Bun Cake I

MMM... delicious. This cake came out moist and nicely dense. I did add vanilla for extra flavor and used Butter cake mix. Instead of making one big cake, I made small cupcake/muffin ones. Put one heaping TBSP of batter, then 1 TBSP of sugar mix and topped with another "small" TBSP of batter. The top TBSP I just dropped on and did not spread to cover the sugar. It added to the presentation. Baked 27 min. The edges were slightly crispy and the centers soft and moist. I added chopped nuts to the sugar mixture which was a nice touch. I received high remarks from everyone who tasted it.

Baked Kale Chips

I love these. Important tips: Wash and thoroughly dry. If possible, dry the day prior. I place the kale in a extra large bowl, add oil and shake until each piece is covered with oil. After laying them out on a cookie sheet, I lightly salt. Baking time is crucial. If unsure on time, go with low and slow. Brown make bitter! I do 325 for about 15-20 min, depending on moisture. For extra flavor, sprinkle parmesan cheese, crushed red chili, dry ranch mix or during shake process add vinegar of choice for tartness!

Just made this. It was delicious! This is a real keeper!! I used Splenda brown sugar and fat free cream cheese to lighten it up. Since I don't like the texture of cream cheese, I threw in about 2 T of oatmeal. It was perfect. My husband gave it a "10".

mmm good. Not quite as light as I wanted. Took advice from other users: 1. after 20 min in oven, I covered with foil so it would not over brown. 2. used honey- egg wash rather than plain egg wash This was an easy recipe to follow. I'm not a baker so all the tips and thorough directions came in handy. The most difficult piece was rolling out the 3 strands for braiding. I literally swung the strands like a jump rope until they were long enough! Rolling didn't work for me!

This is exactly what I was looking for. It was quick and easy. I am amazed how great it tastes. I used plain macaroni since thats all I had. I did add extra nuts afterwards since I felt they complimented well. I don't see how theres much more to alter. And its great hot or cold. Very versatile, can be served as a nice dinner entrée with a glass of wine, to potluck to a brown bag lunch!

Quick and Easy Ketchup

I highly recommend this recipe as a "base" recipe for your ketchup. Does not really require tweaking as far as taste. I did add a little extra liquid (vinegar and water) to reach my desired consistency. Start off with suggested ingredients then as as desired. I did add a bit more onion. My family loved this ketchup!! I will be making it again, possibly adding a bit of jalepeno for a kick!

Fluffy French Toast

Quick, Easy and delicious - all the qualities of a perfect recipe! Made recipe exactly as listed. Results were perfect. I have never been able to make french toast and this came out better than restaurants. I used homemade Irish soda bread cut thick. I started off cooking them in a pan with non-stick spray but was not satisfied with results. Switched to oil and was impressed. Will be making this again but experimenting with toppings.

Sweet Potato Enchiladas

Very tasty dish. I was skeptical of using sweet potato as a filler for enchiladas, but it came out pretty good. I did add extra spices and onions from which it called for. This recipe is a keeper because of the flavors and the use of the sweet potato. The only thing I will definitely change for the next time is that I will leave the sweet potato mixture a bit chunky. I did not care for the "mushiness" of the pureed filling. Perhaps add corn kernels of black beans?? I also will most definitely use a homemade enchilada sauce. The canned stuff does not do this recipe justice.

Instant Russian Tea

I love this recipe. Its a great "base" recipe to make your own version of russian tea. Its easy to modify to suit your taste buds. I highly recommend you mix well BEFORE altering. Here's what I did: I didn't use tang rather an orange drink mix. It tasted more like orange than tang! loved it. I also probably doubled to tripled the spices and added nutmeg. Cheers!

Tartar Sauce I

I love this recipe. It is way better than store bought. I used low 3 parts fat mayo and 1 part non fat yogurt, a little extra relish, added about 1T. of minced bread & butter pickles, and a dash of Texas Pete for kick. This recipe is too quick and easy to make, plus lower in sodium and no preservatives! Why would anyone every buy store bought after tasting this? Next time, instead of Texas Pete, I might mince some roasted jalepeno or green chili (we like it hot!)

My Amish Friend's Caramel Corn

The best popcorn ever! I did not use the paper bag, instead I dumped the popcorn into a aluminum pan sprayed down with Pam. I stirred in the caramel. No mess, no fuss. I sent these out for Christmas gifts via mail and they were a hit. I have also added mixed nuts or dried fruits for a variety.
