Chocolate Mousse Pie

I am pregnant and was looking for a French Silk pie recipe without raw eggs, and this fit the bill. It was super easy, wonderful, and delicious. I used chocolate chips in place of the candy bar and if I'm ever in a big hurry, I'll consider using some "canned" whipped cream instead of whipping my own!

Asian Pasta Salad

This recipe was unique and tasty. I used whole-wheat rotini for the pasta and Light Asian Sesame dressing (Kraft). I also ended up using a stir fry mix that included broccoli, red peppers, onions, etc., and added some of my own green onion. Additionally, I added some chili pepper to give it just a little spicy kick (as I prefer my Asian food to be a bit spicy). The sesame seeds are a great touch and look nice!

Snickerdoodles I

These are super easy and delicious. My husband, who is a tough cookie critic (he makes gourmet-caliber cookies himself), said that these tasted like bakery cookies to him. Great recipe!

Chocolate Pinwheels

These cookies were very tasty, very buttery. I got a lot of compliments. They were a little chewier than I had hoped for; I am looking for a slightly thicker, softer, breadier cookie. These were chewy and flattened as they baked. I did have to amend the recipe a little to get the dough to hold together; I just added 1/4 cup light corn syrup.

Lighter Banana Muffins

These are really great, especially considering how little fat they have. I modified them a little bit per my tastes: added walnuts, 2 tbls. margarine, 4 oz applesauce, and substituted 2/3 cup whole wheat flour for 2/3 cup of the white flour. Awesome recipe, thanks!

Moist Apple Cake

This was fabulous--a really good, moist apple cake base recipe. I did make a few changes per my family's tastes--used 3/4 cup brown sugar (in place of 3/4 cup of the white sugar), used 3/4 cup of wheat flour (in place of 3/4 cup of the white flour), and sprinkled the nuts on top (along with some additional brown sugar for a crusty top) instead of mixing throughout. Very moist, very tasty--it didn't even need the sauce; we just used some Cool Whip (although the sauce sounds scrumptious and I might try it when I serve this cake for company!).

Oatmeal and Applesauce Pancakes

These were really good--I liked the thickness and heartiness. They were, however, a little bland (and I prefer a sweeter pancake), so I added some Splenda and a pinch of salt. Next time will try with walnuts and/or almonds, and probably some diced apple. Yum!

Dumplings

These are very easy, and very good! I had never made dumplings from scratch, so this was my first time. I was pleasantly surprised at how well they came out! I used them on Chicken and Dumplings. A few adjustments, per our tastes: Used 2/3 cup white flour and 1/3 whole wheat flour, 1/2 tsp sugar and 1/4 tsp salt. This will be my staple dumpling recipe from now on. :)

Banana Oat Bars

This is very good, especially considering that it is low fat and low cal! I substituted walnuts for the raisins (my husband hates raisins, but I think they would taste fabulous in this) and halved the recipe (baked in an 8x8), as I was "baking for two." I also threw in a handful of crushed bran flakes for added fiber. Great flavor; great recipe!

My mom used a recipe exactly like this when I was young, but we misplaced it over the years. Thank you for providing us with one of my childhood favorites! (This is WONDERFUL on homemade ice cream, or on brownie fudge sundaes!)

Waffles I

These were very good-- my only advice is to be sure not to under-do them! My iron says the waffles are "done" before they actually are, so make sure yours does not do the same! (Underdone, they come out soggy).

Lower Fat Banana Bread I

This banana bread is amazing. I can't believe any sweet bread with only 1/4 cup margarine could taste this great and be so moist. I also find it tasty to make this recipe with 1 cup white flour and 2/3 cup whole wheat flour.

These were awesome. Easy recipe to follow, easy to roll out, and the cookies held their shape well. Best of all, these cookes stay chewy, no matter how long you keep them! I have some leftover from Christmas, and they're still chewy and delicious. Great recipe!
